I think that the problem is not in the meta. How many times have you seen the same decks in a row? A lot of time. Shaman in shamanstone, druids in Jade druid, priests during Razakus and so on.
I like this meta.
The problem is that HS is old. The game is becoming very boring, it is always the same with new cards.

Well, arena has always been the same with new cards and I still enjoy it. In the other hand, I find the current state of constructed boring as hell.

I guess to each his/her/their own, huh? I don't hate the state of the game, honestly. There seems to be a range of viable decks out there right now... ranging from aggro, to combo, to (kind of) control. There are decks that shoot you from hand and decks that play for board.
If you keep running into quest mage, then tech in some cards that are good against it, if you can. Crossroads Watch Post and Ogremancer can win that match by themselves.

I've never been so close to just uninstalling hearthstone.... 5 rounds in a row quest mage.... It's just not fun anymore.

If your deck can't fit those in, then you could try Robes of Protection.
And be prepared to never see another quest mage again once you've made changes to your deck to beat them :)
That's the next problem... the algorithm that assigns you the opponents is a bad joke. That wasn't the case in the past either
This thread isn't very constructive with basically just griping about Quest Mage in the Meta. Closing this.
