I like the cards that can create swing turns. A few spirits like: Spirit of the Shark, Spirit of the Frog or cards like Mana Cyclone. Cards that can make you say "that is not how you sax bro."
Myra's Unstable Element It's such a cool card, it's incredibly powerful and basically game-breaking as a base, but has a massive downside. Manipulating that downside is where it really excels, with things like shuffle effects, Mecha'thun, Chef Nomi, e.t.c. I only wish it had a better chance at becoming genuinely viable in shuffle decks one day. :P Only time will tell.

Genn Greymane is the first one that comes to mind if my only criterion is playing the game, not the art, flavour or design. This card enabled Even Shaman, which I love to this day, Even Warlock which was my favorite deck for a while, Even Paladin, Even Hunter etc etc. It was a polarizing card, but I prefer it over Baku, by a lot.
I also love pretty much everything related to Secret Hunter, even if I did not play any iteration of the deck for years. Cloaked Huntress is the first card I crafted golden(I know it's only a common, but still, love the card). Rat Trap and Dart Trap were my favourite secrets. Subject 9 is also a card I enjoyed a lot and I still like seeing its ugly face.

From the current standard format: Tickatus , he just feels righ to play. Even without the corrupt a fat 6 mana 8/8 is sometimes good enough on its own if you need board pressure, even if he burns 5 of your cards sometimes the lethal setup is just worth it.
Also Bearshark for no real reason I just like that card. And all 4 old gods from the Madness expansion, they all are fun to play for me.
Legacy/Wild cards: Probably the one which I loved the most is Leeroy Jenkins , the card flavour was just right plus it was a pretty good card also.
Another one I have fond memories of is The Lich King it just felt too cool to play him, I hope they bring him back one day.
Started playing with his combo in druid some time ago, I never really liked druid class, but even though win rate is not very high, it is so satisfying when I make combo with him work, I guess it is the only fun deck in the game currently for me.
Going through old cards getting dust got me thinking about this thread again.
Couple other decks I thought were fun as I got to Mean Streets and Un’Goro. The main ones that I thought of were Jade Druid, Bloodbloom Warlock, and Even Shaman before it really got popular.
I think there’s also a few good ones rotating that I’ll miss after a bit. Tamsin Roame, Jace Darkweaver, and the SI:7 cards come to mind.
Honestly, and this may be the most controversial favorite for Hearthstone, Mayor Noggenfogger. I'm one of the few people who loves the fun that randomness brings to Hearthstone, and Mayor Noggenfogger is the epitome of that randomness. Also, I will never forget the win I had against Quest Mage back when Un'Goro was standard, and how they somehow hit themselves with Fireball four times in a row.
Honestly, and this may be the most controversial favorite for Hearthstone, Mayor Noggenfogger. I'm one of the few people who loves the fun that randomness brings to Hearthstone, and Mayor Noggenfogger is the epitome of that randomness. I love two things in hearthstone more than any other, playing priest and discovering spells, so I would have to give it to Palm Reading and Shadow Visions. Identity Theft is up there, too. I want to like Sister Svalna, but I can never seem to recover from the tempo loss outside of Duels.

Deathstalker Rexxar, Vereesa Windrunner, Kathrena Winterwisp, Emeriss, Feign Death are also the cards I consider favorite.
Other than Hunter cards, I can mention Earth Shock, Ancestor's Call, Cumulo-Maximus, Instructor Fireheart, Void Terror, Spreading Plague, Starfall, Malfurion the Pestilent, Molten Giant, Faceless Shambler and a bunch of others - i already mentioned too many of them.

Definitely Kingsbane before the nerf to Leeching Poison. Win rate was low but once you have control of the board, you truly felt like a king.

I do not play priest anymore, because dragon priest does not work anymore, but Ysera, Alexstrasza, Drakonid Operative, Duskbreaker are my favorite dragons in the game. Shifter Zerus, Chameleos I used in most of my priest decks.
