Finally got the new update downloaded and noticed that my collection Achievements are short cards even more now than when they instituted this system.
First off, I already completed Galakrond’s awakening. And when the achievements were added it dropped me to 27 of 35 cards. Now with the new update, it dropped me to 22 of 35. So with a little dust laying around I crafted some of the commons again to get me back to 27 of 35.
Now get this. As soon as I dusted them again it dropped me back to 22 of 35. WTF Blizzard? Get it together.

Might be the whole Achievement system has tanked for me. Just did my daily quests specifically playing a deck to cast Illidari Studies. Played the spell 6 times over three games and have been credited for zero, even after I rebooted the game.

Were you playing in ranked or duels? Otherwise it wont track your progress.

Ranked. I'm aware casual doesn't count, although it should.

Why don't you mind your business. This isn't a regular salt post. It's also to let other people who might be tracking their achievements that they might not get credit for what they do, which will turn into a waste of effort on their part.
This isn't a game for just children. It's a game for all ages. And features should work as intended. So kindly take your snotty remarks elsewhere.
Always has to be some edge lord coming into threads trying to sound hard flexing their internet muscles.
Back on topic. I switched to PC to see if it was a platform issue and still had the same problems. The system is still not registering items in the categories unless it's completed in full.
As stated if a made a card and dusted it, the card count went back down. So I went ahead and remade all the cards that were needed for Galakrond's Awakening, and the system did register the completion.
So I'll assume people will need to complete an achievement in its entirety for the system to log it. This is fine for achievements that only need to be completed once, but the accumulative achievements will not log properly like casting a certain spell over three levels of requirements.

Just a follow up after a month and going back and forth between Blizzard and myself.
Basically the end result is to make a thread in the Bug Forum and go pound sand. They literally cannot facilitate a resolution to this issue.
I can concede rewarding previously played adventures, but the systems inability to keep track of opened cards and keeping them counted now affects my ability to dust unwanted cards without losing the collection achievements current progress.
So I have to decide to get the completions the hard way by holding onto all cards and dusting nothing, or abandon the Achievement system altogether. Since the system has shown me too many bugs on top of this, I'm just gonna abandon it. Not worth the time or effort.
