The evidence is actually in point 3. Y'saarj's text specifically states that it only adds copies of cards you have played. Therefore resurrected or summoned cards will not count. Y'Shaarj, the Defiler
Oh, looks like I misunderstood you. I thought that by 'copies' you meant copies generated by cards like Hunting Party.
Ah, I see the ambiguity there. Yeah, there are (weirdly) different "types" of copies, I guess. Heh! I think the key difference is in whether the card is played, or brought back. I believe that cards like Shadowstep that return to hand don't count as a new copy when played (it's the card, as far as I recall). Also, I do recall there is something weird about the interaction with cards that return dead minions to hand, such as th 0-cost Warlock/Priest Dual spell (forget the name) - since these are the same cards coming from a pseudo-graveyard and therefore are not "new" versions as such.
Meh! Blizzard "never" makes cards with ambiguous and illogical design instances, hey? XDDD

If you play 2 or 3 Fleethoof Pearltusks in the game and then play Yshharj on turn 10, shouldn't you get 2 or 3 Fleethoofs if you corrupted them?
I've only been getting one and a Don't feed the Animals card.
You do get all copies unless there's some new bug. Though you most likely just played uncorrupted version by accident.
You should get all, but remember that Yshaarj do not give cards which you played uncorrupted.
A quick checklist:
