Priest - Duskbreaker. Such a powerful card but only useful in a Dragon build. And I love/miss dragon Priest.
Shaman - Pre-nerf Shudderwock. I loved playing combo shudderwock before the nerf. I never understood why it had to die, it wasn't that good of a deck, and if folks didn't like the inevitability of the end, they had access to the concede button. It was such a fun deck to pilot.
Rogue - I don't have a lot of love for Rogue. I guess the card I would like most is that spider that shuffles 3 instant cast spiders into your deck when drawn. That always felt like a fun mechanic to me.
Warrior - For warrior sadly, I miss the days before card generation. Back when you knew the cards in your opponent's deck and could plan accordingly. Can I get that back again?
Hunter - I guess pre-nerf starving buzzard. I find Hunter a bit degenerate in general, but for some reason I don't mind Beast Hunter as much. Giving Hunter back the buzzard would certainly push some beast hunter into the meta.
Mage - Ice block. I never HATED playing against it. it always felt core to the class to me. I would give it back.
Druid - Hadranox. I thought the card and deck was a very nice change of pace in the meta when ever I faced it.
Paladin - Mysterious Challenger. It ruled the meta for a while, but I felt like once you got used to playing against it, it wasn't that oppressive. It gave Paladin a nice identity for a while.
Warlock - Skull of Guldan. Seemed like a really cool card to me. And without Cube in the meta, wouldn't be quite as good.
Demon Hunter - I guess I'll throw a neutral out there. I'll say Dirty Rat. Not because DH would love it, but because I think Dirty Rat should be a classic card.

I too was a fan of the Fal'dorei Strider. I would also like to see Vilespine Slayer and Sherazin, Corpse Flower return. Hell, just bring back Ungoro :p
Doppelgangster would have a chance of making shaman playable again.
Definitely Gnomeferatu , would be so good after they play Lorekeeper Polkelt. Also i miss very much Tinker's Sharpsword Oil in Standard,it is hands down the best Rogue card ever made.
