Just hit legend with Galakrond Warlock... lost to one Paladin from D5-Legend... beat the rest. I don’t have full stats, but I can say that I played at least 10 of them.
I’m currently playing with a Quest Rogue deck that Deckster has showcased... and it seems to be pretty good against both Paladin and Druid. Struggles against Priest and OTK Mage though.
Basically anything that destroys their board. Priest, Warlock and Warrior to some extent should do fine. Paladin has little-to-any comeback tools; Libram of Justice is not even ran in some lists. Answer their board and they are left with a few useless buffs in their hand.

Can confirm this also worked for me. Hit legend last night facing many Paladins.
I played against a few Paladins the past few days and lost against many of them.
But when I tried it out yesterday myself, I had a terrible time with it. Unlike my opponents, I wasn't able to perfectly curve out every single game beyond turn 5. I oftentimes ended up with too many spells and an empty board, or an empty hand and a lousy draw. From what it seems, a lot of people are currently teching hard against Paladin as well, and at least in parts, it seems to work.
No doubt a strong midrange deck, and Paladin might still end up as the best class overall when decklists are optimised, but the versions that I've seen certainly seem beatable. If we don't get a balancing patch next week anyway, the deck's winrate should drop a bit soon.

50% win rate against them, dude, but if you are more lucky than your opponents or pilot the deck much better you can make the difference! ;)

Big DH with 2 magehunters (and Consume Magic) are really good against paladins and/or aggro. But priests will become your nightmare so yeah...
I found out that Big Game Hunter work very well with the new Paladin deck.

I beat paly 3/3 games with big Warrior
Rogue with sap, Priest and Galakrond Warlock stomp paladin very easily. Basically any deck that makes them regret buffing their minions will do.
