like i dont know what to do. when i was playing they said that there wont be adventures only going to be packs. but now there is packs and adventures. should i grind for them? i have no idea
If you want to spent money you can by the pre-purchase bundles for the next expansion, but I would wait till more cards are released to see if they are meta defining or not.
MIght seem a bit confusing when you open the single player menu, but it's not as bad as it might look to you. Most of the latest adventures you can find do NOT reward cards or anything essential, despite coming with paywalls. They mostly reward packs or card backs. Rise of Shadows gives you a special legendary, which is very forgettable: similar to (but worse than) Whizbang, in case you know about that card.
The only exception is Galakrond's Awakening, which, as far as we know, was a one-time-only thing. It will rotate next year, and you should only invest in it if you like the cards. Some of them are pretty good, but the meta is likely gonna change massively with the next expansion. Also, unlike 2 years ago, balance patches are fairly frequent nowadays. In other words, I think you should not worry too much about getting Galakrond's Awakening for now.
About packs:
In case you haven't heard of it yet, there are new rules in place that guarantee you that you won't open superfluous copies of cards of a given rarity until you have all cards of that rarity.
In other words, if you want to get some packs from expansions that you missed, you will get a lot of new cards. Around 30 packs, you should have all commons of a set, all rares around 60, and all epics at 150 or so, iirc.
About ranked:
You might have noticed that ranked mode looks a little different. Better read up on the changes. But something important for you is that you can get a bunch of rares, one epic, and a bunch of packs at the end of the month (depending on how far you get). As with the pack rule, the rares you receive will be ones you don't own yet (limited to Standard though), and the packs will always be for the latest expansion, helping you further to catch up.
About Demon Hunter:
The single player adventure for Illidan needs to be completed to unlock Demon Hunter as a class, and with it, you'll get the entire Initial Set for DH (it's all free).
That's pretty much what you would probably need to know for now. SInce you haven't played in 2 years, I recommend you to check out Battlegrounds as well (which is available under the new Main Menu button "Modes", next to Arena), and you might want to read up on all the other things that happened since you last played, just to get familiar with the game again.

There will only be expansions, that adventure was just a one-off thing that won't be happening again this year.
If you want to grind, and I mean GRIND, you can do arenas (in this meta always autopick warrior, 2nd option mage, 3 option paladin or hunter).

If you are good at it or can eventually become good Arena is always the best pick for getting more cards.
