I have been playing what I guess would be called Highland Hunter with the wish guy. It's pretty close to this deck, but wonder if tracking is worth having because it seems to have several cards you need and with only one copy it creates problems. heh.
Also, been seeing lots of Demon Hunters and I've only won once against them. Is that my kryptonite, or is there something specific you have to try and do?
You can sleep one of their guys for 2 turns which helps greatly. In addition, you can destroy a random minion with the dragon card. Which makes me think that maybe tracking could be replaced with something to heal, or silence, not sure.

Absolutely keep Tracking - I too hate destroying my own card, but when it looks like you're about to lose the initiative, it can help you find the answer quickly. Against (tempo) DH early game is everything; mulligan for cards that answer his satyr and the demon that grows when he attacks. For Highlander DH, keep a balanced hand and put pressure. Finding the right combo between board control and pressure to his face will be key to victory.
New players tend to see destroying a card as an issue, but it really isn't in most cases. A deck such as highlander hunter never draws the entire deck in a match, so destroying two cards is the same as if they were at the bottom of the deck since the start of the game.
Also, when you destroy two cards, you're pushing every other cards up, it's really the same as putting them on the bottom and moving on, which is not a problem at all. It sure sucks when you destroy a good draw and the next one is worse, but it happens as often as destroying a bad draw and getting a better one.
Tracking is a great card that fits in almost any hunter deck, and destroying cards is only an issue in some combo decks that may need a specific card or in some control vs control matches in which you may need every value card to win.
Keep tracking. It will win you games. It’s more of a late game card than early because you want if for a solution. You have some more controlly type cards in there when I think you need more aggressive/ removal.
against DH you want to just be able to live through their early game so consider what you need against 2 health minions. The 2/1 rush beast works well. I used it last month when I got legend using highlander hunter.

Yes, tracking is worth because Hunter doesn't have much draw. DH is a bad matchup but not very bad.
