@OP I don't know why you feel Death Knights will not happen, if anything this confirmed that they will happen now that they have changed their stance on new hero classes.
Obviously they missed the prime opportunity with Icecrown but there will be future opportunities to do so with a Scourge expansion for example.
It seems obvious, at least to me that Death Knights and Monks will be coming to the game. Granted probably not for at least 12-24 months but they will come. I would imagine a Mists of Pandoria is on the menu for Hearthstone in the future.
Reminder that DeathKnights were hero cards so it might be a little issue.
Not an issue in Blizzard's Universe, we've got reprints for all major dragons (Ysera, Alexstrasza, Deathwing, Malygos) or Reno, Brann, Elise & Finley afterall.
To be honest...Unneeded. I mean damn I never thought I would say after all these years finally a new class gets added to Hearthstone and I say its unneeded but I honestly couldnt see the need of this class.
DH might actually breathe some fresh air into the game.

Personally, I really dislike Demon Hunters' background. Sorry, but they are just a bunch of emo kids. It was fine for me when there was only one of them around (Illidan Stormrage), but seeing many just doesn't feel right (yeah, I don't like WoW: Legion expansion). Cringe as f...k!!! :(
heck that dude, we got the power of the mid-2000s in the game again.
I would have preferred death knights by a long shot but I'm just happy to see a new class after all these years, still hoping to see DK playable at some point. DH's so far seem very aggro/tempo'ish and I fear that their hero power might be a bit to strong. Lorewise DH's are supposed to be agile fighters after all, maybe DK's will be leaning more towards control.

It would have been the exact same thing tbh, just without an iconic character to helm the whole thing

Rogue hasn't had vanish in about a year, but has still been competitively viable in literally every expansion since.
All they need is a singular survival card similar to Zilliax, and they'll remain competitive for this expansion too.
