Everyone talks about how fun new expansion launches are but I feel like folks were netdecking by day 2. And... for some reasons this expansion has felt the worst of all when it comes to deck variety of opponents. It's not even really balance or "this deck/card is so OP" ... it just has not been fun at all.
If you play Ranked, always expect netdecks, at any rank.
If you play Casual within the first week or two of a new expansion, expect people testing out netdecks.
Hearthstone is thankfully a lot more than just running head-on into netdecks... but if you only play Ranked and/or don't have your expectations set properly then yes, the fun factor is diminished.
Netdecks are just part and parcel of Hearthstone, and any other CCG out there.
I'd take a break if I were you. Sounds like burn out. Happened to me just before the release of Gadgetzan. I took a three month break and came back refreshed and ready to go.
Avoid anything Hearthstone. Don't check any of these Forums, uninstall the game and just forget about it.
I honestly feel like there should be a seperate mode where non netdeck decks are the only decks playable
and how do you suppose they implement that? if they banned specific decklists people would just change a single card and get around restrictions. do people who want this have any idea of how pointless it would be to try and implement that into the game, I would genuinely like to know a solution that they think would work.

Really, truly, you need to get over this concern about "originality," as if that has ever truly existed in Hearthstone deckbuilding.
As long as you cling to that notion, you will never be happy with this game. Stop worrying so much about what other people are playing or why, and pay more attention to how you can beat them.
Accept the game for what it is. Don't be mad at it for what it can never be.

Could be burn out or I feel like people just care so much about ranking up a ton that it kills them on what decks they can experiment with. This expansion has been pretty good when it comes to fun weird decks I feel. I also feel like anyone who thinks this expansion sucks or is boring wasn't around for Knights of the Frozen Throne where it was literally 80+% druid.

I agree with OP in one thing - I think the reveal made more obvious strong decks than usual. Often, there is a phase of searching out the strong decks, and there still is, but we all knew exactly how to make a bomb warrior, a token druid, a mech hunter, a summon mage, etc from day 1. Those were all very obvious decks that didn't even require any netdecking.
Netdecking is fine in generel. One thing is to copy a deck, another thing is to actually be able to play it well. And we all see players making huge mistakes all the time with these so called tier 1 decks. Being decent or good at deck building then you can gain a small edge vs the field.
All in all netdecking is part of the game for better or worse. It's all about fun and everybody have their own idea of what's fun or not.

After I posted, this thought struck me as well. It feels like the archetypes were SO forced by Blizzard this time that there wasn't even any room for experimentation. So that has definitely been part of it.
I will also concede that I may just not like these current net-decks (as so many pointed out, there are always net-decks... and there are, sure ... but something about the last week of games has been unfun for me).

It's called arena and it's been the best mode in hearthstone consistantly now for 5 years. More rng for less rng (arena players will know what I mean by that). Good players more consistantly rewarded, bad players more consistantly punished. Niche cards see play. Genuine rewards for your playtime invested instead of 10 gold per hr or whaterer it works out at. Recent changes mean Arena is better than ever.
Though I've got to say, I do feel like this particular expansion and rotation has really breathed life back into constructed hearthstone, it's genuinely fun right now to me and in it's best spot for a long time.

I've played since goblin vs gnomes. My longest break from HS was whole expansion and a half. Other than that I usually make 2-3 month brakes when every battle lost feels like it doesn't make sense to play this game any longer as it all comes down to RNG.
For me, the least fun aspect of the game right now is control vs control, where instead of skill it comes down to who generated stronger RNG card. Losing to hard RNG after 30 minutes is just soul-crushing. Like the last 2 days, I had terrible control mirrors. 1st spell hunter put my 10/8 paladin tiger into his deck - game lasted 25 minutes. Then another day control warrior's discovers through dr boom and assembly were just nuts.

class bans, card bans, rarity restrictions, set restrictions, no turn limit, no 2x limit, higher starting health, starting armor, each player starts with X in play (for example, three random secrets), "fun mode" only cards (cannot use them in casual, ladder, or arena), that's just off the top of my head, but you're probably right they've exhausted all possible ideas for implementing a new mode that encourages non ladder decks.

Bro I'm having a blast. Won 2 games each with Astral communion druid with jepetto and renounce warlock with plot twist.
If you can't accept netdecking, it's years past time to pack up your tent and move on.
Free to try and find a game, dealing cards for sorrow, cards for pain.
