1. Game-turning: Tinker's Sharpsword Oil. So many sudden lethals generated or prepared with this one. Notable mention to Sap, which is not as spectacular, but just as game-turning (if not more, with all the crazy summoning shenanigans of Wild, ie Big Priest, but also (4)7/7 ).
2. Deck- and Meta-defining: obviously Genn Greymane (Baku and Reno as well ofc, but i am a fan of Even).
2b. Auto-includes: Sap again, and Branching Paths. Historical mention for Loatheb (still staple for non-Even decks) and Dr. Boom (currently optional).

Undertaker/Mad scentist :They shaped the meta so much you were either a hunter or a deck trying to counter that hunter
Mysterious Challanger:Shaped the meta a lot
Dr Boom:Auto include in every single deck at his time
Ragnaros:More iconic than op probably but did see a lot of play for a long time
Yogg before nerf
leeroy pre nerf, axe pre nerf, UD pre nerf, YOGGERS pre nerf
