JtU is the best designed set in a while, IMO (if we dismiss The Caverns Below, of course)

I am really looking forward to all this OP trash rotating next year. I really like the new direction blizzard took towards balance this year.
I hate to disappoint you, but Shudderwock is staying. Also, speaking of which, Shudderwock is just as broken of a card as the ones rotating out, so don't get your hopes up about things magically getting better. The offenders will still be there, just different cards.
Shudderwock without Grumble, Zola, Volcano, Healing Rain, Glacial Shard, etc. is probably unplayable.
I assume you're maybe unaware of the Tempo Shudderwock deck that is currently super-strong right now? It doesn't use Grumble, Zola or (sometimes) shard. It also doesn't rely on RnG ordering of the battlecries, making it a lot more reliable.
So, yeah, you can expect Shudderwock decks to be just as (if note more) obnoxious as they always have been. Essentially: "If I get to my Shudderwock turn, then you pretty much lose. GG buddy..."

There are so many disgusting cards. So many unpunishable even while hardly misplayed cards.
Rastakhan is probably the last expansion Team 5 could have screwed up that hard. Hopefully they were already on their way out.
