After coming back to Hearthstone about a year ago, I crafted the druid quest and Kun. I know Kun has some wacky OTK plays in wild, but still. I thought they would go hand in hand together, and I was wrong.
Besides that I can't think of much, as far as regrettable crafts. I usually wait until I'm absolutely sure that I want to craft something haha. I also crafted mage quest, which was fun for a while, but I don't think it'll see much more use any more (since other, better exodia decks exist).

I got scammed into crafting Lakkari Sacrifice when I opened a Clutchmother Zavas. My thoughts were "maybe two useless cards could be something great togethter"
Back in Un'goro I opened 2 legendaries on the first day and they were Clutchmother and The Last Kaleidosaur so I crafted Lakkari Sacrifice to complete the trifecta lol turned out to be close to all the worst legendaries of the set.
I ended up crafting Lyra later to make up for it and had a lot more fun in that meta and a bit more success!
Right after the Old Gods were released, I saw a video of Trump playing a super greedy Dragon N'Zoth Priest deck (yeah, I know, "super greedy Trump deck" is redundant) and decided that it looked really good and I should try it. So I went along and crafted this guy, Cairne Bloodhoof and Chillmaw (I had already opened a N'Zoth, the Corruptor.) I got some use of Chillmaw in other dragon decks, and Cairne, while not being a top legendary, can find a place in Deathrattle oriented decks; but despite the stats and Deathrattle, this one is just too slow.
Hemet, Jungle Hunter for a meme Rogue Mill Togwaggle Deck. Pulled the combo off quite a few times but since Coldlight Oracle went HOF I couldn't find any use for Hemet.

HJH was a key card in a fun but effective version of (pre nerf) Razakus. You used Hemet to fast track your way to Raza and Anduin, then Benedictus to fill your deck back up. It was quite fun and nearly got me to legend.

Probably Tess Greymane, but still zero regrets. She's one of those cards whose power level can increase dramatically in the future. Pretty memey in standard right now, but can be boosted to ridiculous levels in Wild. Once fired off 33 priest spells.
Lynnessa. She isn't bad, it's just that I crafted her on a whim and I don't have any of the cards I need to actually justify crafting her. So right now she is sitting nice and pretty in my collection, waiting to be used

I dusted Y'Shaarj because I thought he was out of the meta and used the dust to craft Pyros.
Haha, I see him on a lot of the top Odd Paladin decks in HSReplay. "Nope, not falling for it!"
As others have mentioned here... don’t drink and craft... you might end up with Loremaster Cho.
White Eyes. Won an open cup playing it in a midrange shaman, but it was still a bad legendary (with some potential maybe).
And of course the worst of them all... Clutchmother Zavas.

I crafted Hadronox before Witchwood because it seemed fun and I wanted to test out a deck idea I had.
I crafted Nexus-Champion Saraad a long time ago because it seemed fun too.
