So the recent change to the quests and quest rewards massively changed the rerolls as well. The big question is if it is now worth it to reroll 60-gold quests as well as the obvious 50-gold ones. Let's have a look at the numbers:
Number of 50-gold quests: 47
Number of 60-gold quests: 19
Number of 60+gold quests: 7
Total number of quests: 73
You can reroll into the same quest, so you will always have 72 different options for a reroll, and rerolling a 60-quest will lower your chance of getting another one slightly. If you have a 60-quest, you will therefore get:
50-gold: 65% 60-gold: 25% 60+ gold: 10%
It seems like rerolling a 60-quest is not worth it. However, you are only losing 10 gold if you "lose" the reroll, and you have the potential of gaining 40 if you hit those premier quests granting a pack, 100 or 80 gold (160 if you go here). Not to mention, if get a 50 quest on your reroll, you can potentially reroll again the next day.
Unfortunately, I am not math savvy enough to do the complete calculations, but I have a feeling it is very close...
I would say no for rerolling 60 gold quests. But it all depends on what you prioritise as a player. If you have virtually no cards for rogue and you got the quest to play/win with rogue, it may be more time efficient to reroll. But generally speaking, unless you are new to the game or hate/struggle with a particular class, then I would say it is better to keep the 60 gold quests.
My rule of thumb is to reroll a quest everyday unless the only quests i have worth more than 60 (100g, 80g, pack).
The difference between 50g quest and 60g quests is negligible, so even if i have only 60g quests i prefer to take the risk and reroll one of them for the 10% chance to get one of the 80g+ quests (usually they're easier to complete too).
I would reroll a 60 quest. 10 gold potential loss isn't enough of a difference to not try to get a free pack or higher gold. For me, the Play a Friend quest nets 160 because I use the trading forum here.
I'd routinely reroll 40g and 50g before the update, but ever since they upgraded 40g quests to 50g I feel like 50g is all I'm getting now. For that reason, I wouldn't reroll 60g because it definitely seems more skewed towards the lower quests than it was before.

When was the last time you received the "2 victories" quest? Earlier this week? Me too! When was the last time you received the Murlocalypse quest? Last year? 2 years ago for me.
With 40g quests, the average quest value was right around 50g or 52g depending on how you value the Challenge a friend quest, so it was definitely worth re-rolling 50's in both cases.

Well chances are you will get 50, but if you are not completing it any time soon rerolling is ok

Where did you get these numbers because https://hearthstone.gamepedia.com/Quest#Gaining_daily_quests there are only 42 quests, or am I missing something?

I only reroll 60s if it's going to be a grindy burdon to complete. My enjoyment from playing classes and modes that I like outweighs 10 gold.

Well then, let's do the maths!
For this, we need to break it down into specifics. So the 7 quests that are "worth" more than 60 gold are:
Play a friend - 80 gold
Win 5 games in any mode - 100 gold
Play 50 battlecry Minions - 100 gold
Play 50 Murlocs - 100 gold
Watch a friend - 1 pack (~100 gold)
Defeat 3 Dungeon run bosses - (~100 gold)
Defeat 3 Monster hunt bosses - (~100 gold)
Imo, this means there is 1 quest worth 80 gold, and 6 worth 100 gold (since we need to assign a numerical value to a pack)
So, we can calculate a mean average "amount" that the next quest would be, by adding together all the values and dividing it by 72:
So: ((50*47)+(60*18)+(80)+(100*6))/72 = (2350+1080+80+600)/72 = 57.08
Meaning, on average, you're likely to lose 2.92 gold per re-roll on a 60 gold quest. It is close, but likely to result in a loss more often than not.
If anyone was wondering (like me) how the taverns of time event changes the stakes:
We got 6 new 60 gold and 4 new 60+ gold quests (3x 80 and 1x 100)
((50*47)+(60*24)+(4*80)+(100*7))/82 = (2350+1440+320+700)/82 = 58,66
The avarage is now 58,66 gold, so you will still lose 1,34 gold on average if you reroll a 60 gold quests.
But the dust you can get with the event quests is well worth the risk of losing 1,34 gold.
The chance for an event quest, if they are just in the normal quest pool is 12,19%
