5 mana is a lot for an aggro deck and think most of them want a little more guaranteed value like Cobalt or Fungalmancer. It's probably fine in an aggro deck and can certainly take over games, enabling kill command is icing on the cake. Being bricked by a righteous protector is a major bummer though.
Remember 2 months ago when I was climbing to rank 15 for the golden rare, I was playing C'thun Rogue (that's what I had!) and faced a Spell Hunter.
After like 14 turns and tons of Zombeasts, I was at 2 hp and about to lose but apparently he forgot I was playing a C'thun deck and dropped a Zombeast Bittertide Hydra with something else. I topdecked C'thun and won that game.
And now you have Tempo Mage with Arcane Missiles AND Cinderstorm, boards full of 1/1 Dudes (plus Avenging Wrath from Even), Defile, even Druids will happily throw Greedy Sprites into it. Control Priest can abuse the shit out of Wild Pyromancer against it. Against Shaman you'll never want the thing on the board.
Thanks to Paladin a lot of classes are running one drops like Fire Fly, Dire Mole and etc that can get a lot of value against an Hydra.
This just shows that plain stats don't mean anything. The synergy is way more important. That's the reason why Dr. 7 and the 4 mana 7/7 slowly lost their popularity (although the last one is still used in aggro and in even shaman).
Because it takes a brain to know when to play and when not to play Bittertide Hydra. A bad player will play it when they shouldn't and just lose on the spot to many of the cards already mentioned. It's also a card that you most certainly cannot bot aggro with, for the same reasons.

just wondering, it was played last format, why is it not played this format, seems like it would be decent in odd hunter.

Too scared of Volcano.
Too many ways to trade smaller minions to kill it, and also too many board clears/minion removals now.
Scalebane/Fungalmancer is preferred.

Yeah you dont want bittertide anywhere near the board when the meta is filled with dude paladins and cheaper cost aggro decks.
Ill go with defile since it started seeing less play during frozen throne meta.
I guess it's because of paladins with 1/1s and warlocks with defile.

You have a winning position and play the Hydra, your opponent can win a lose match with:
1- Volcano.
2- Split damage mage spell the cost 1 and 3.
3- Even paladin with 8 damage spell.
4- Odd paladin can make with 5 manas a full board from nothing, you can deal 8 damage in your turn but take 15 or more in next.
5- Even paladin and normal paladin can turn your high cost (for aggro) minion into a 3/3 with Tarim.
6- Warlock can wipe your board and give + 20 damage with Defile.
Don't get wrong, the card is good, but too risky right now, better run Leeroy or Scalebane.
