I was playing a game against a hunter, and two weird things happened to me, first one: he played 3 kindly grandmothers, I have no idea how, he didn't play any beast generator like Jeweled Macaw and the weirdest thing happened after that, I played Freezing Trap and he attacked with the grandmother, it came back to his hand and then he played it again for 2 mana. How?
its hard to judge from this view but it´s almost impossible to hack in hearthstone this way, since cards on server are hard-coded, so i doubt there is way to do these things.
Maybe I missed something about the 3 grandmothers, but for the trap I'm 100% sure, he was at 7 mana, attacked with the grandmother into the trap, played it again for 2 mana and then hero power, passed the turn with 3 mana left.

then it was probably just a visual bug on your side
Could be that you missed 2 stitched trackers. The grandmother that he played after the freezing trap was a 4th one discovered by the tracker so it cost 2
I know there was a glitch a few months back, where if you could click fast enough (aka auto clicker), you could have 3 copies of a card in your deck. Pretty sure it was fixed though.
Whenever a weird thing like this happens (or you think it's weird) make a screenshot, even if the play already happened, the history tab can provide quite a lot of information, so you can have some evidence as to what happened. No offence, but just your word is simply not enough, chances r you missed something.
I know the list is long and most of the cards listed have no chance of appearing in your game, but maybe you remember something looking at all these cards. Also, I'm aware that there are more ways to gain additional card (Sylvanas Windrunner, Hungry Ettin), but I decided to not put these in, because you would have to play them (or Kindly Grandmother) and that would be obvious. Sorry, if the list is incomplete.

i had opponent play three saps with rogue today, i think this might be a real thing.
I would bet a lot that he had valeera the hollow up and you forgot about her hero power.

First off, even if your opponent cheated, why Kindly Grandmother? Why not, I don't know, Crackling Razormaw for instance?
Secondly, others have already pointed this one out, evidence. Anything would be helpful, even a screenshot.
Lastly, maybe it's one of those card that made another Kindly Grandmother (assuming you are wild player):
1. Generation - Ball of Spiders, Ram Wrangler, Jeweled Macaw, Stampede, Grimestreet Informant, Stitched Tracker, Infest, Abominable Bowman, Webspinner, N'Zoth, the Corruptor, Chromaggus, Kel'Thuzad, Spiteful Summoner (yes, I will include this), Summoning Stone (and also this), Carnivorous Cube, Faceless Manipulator, Tomb Lurker, Barnes, Piloted Shredder, Tomb Spider, Prince Taldaram, Shallow Gravedigger, Zola the Gorgon;
2. Activation (as in it wasn't Kindly Grandmother who was summoned for the third time) - Feign Death, Play Dead, Seeping Oozeling, Princess Huhuran, Terrorscale Stalker, Spiritsinger Umbra, Baron Rivendare.
