I played a creature/card removal lock earlier and matched a priest. Turn 2 I play Gnomeferatu and she top decks shadow anduin from my opponent. He quits immediately even after threatening me off the bat.
Using the same deck, i later match quest mage. I am concerned. I dirty rat on turn 3, pull archmach antonio. Next turn i kill him and the mage quits.
Are these dudes so desperate for 1 card to win? Why even play a deck that can be thrown in the trash can so quickly?
Because so few people play Gnomeferatu and Dirty Rat that having a one card win condition is worth it. Even then, running either of those cards has a higher chance of being an instant loss versus Highlander Priest (which usually runs Obsidian Statue or Lich King, pulling either early game with DR is an instalose). You got lucky, but generally neither of those disruption cards are worth it.
TLDR their decks destroy the meta so often that the extremely small chance that they get disrupted isn't even a consideration.
Yeah. The odds of them having Antonidas on turn 2 and you running dirty rat AND your dirty rat pulling it AND having removal for it is low enough that they can still have a good winrate. It'd be like playing vs tempo rogue and gnomeferatu-ing their Keleseth. Had you not had your gnomeferatu in hand they would be seriously ahead. It works the same with any combo deck, for example the old freeze mage. Their goal is to have a turn 9 alextraza and a turn 10 fireball+fireball+frostbolt for lethal. If you burned one of those cards, specifically alextraza, it ruins their whole gameplan. But when it does work for them they have a practically guranteed win.
To be honest, either of those decks could have probably try and grind u out ... but when an unlikely scenario like the opponent playin Gnomeferatu or Dirty Rat happens and then even more unlikely scenario that they get rid of your most prized card that is a part of your win condition happen ... i bet they were just salty as hell and didnt want to be in that game anymore, even if they could have won in the end. Not worth it, better shake it off and go to a next one, since chances r, this will not happen again for another 100 games :)

It is not 28/30, because they might have them in hand already... Dirty rat is always good tho, especially if you have a way to remove Raza and Velen.

Kibler posted a video to his YouTube channel earlier this week - he killed Tony with Dirty Rat + Twisting Nether and lost a few turns later due to burst damage from Apprentices + Spells. Especially against Warlock, winning without Tony seems completely do-able, depending on what damage spells might be found from Tomes, etc.
Conceding right after their main win condition is pulled doesn't mean they're salty, just means that their mind has realised that their chances of winning have gone from X% to below 1% and rather than put in the effort to gain the experience of how to pilot the match-up to some degree of success, they choose to just move on to the next game. This is either done due to time constraint or them not really caring about learning the deck since they play standard and it'll be replaced soon enough anyway.
It's kind of like back in the old days when queuing Freeze Mage into Control Warrior was considered an auto-loss and only a very select few would play every game out even against warrior cause there was always that 1% chance you won.

Guys, It's not 2/30 chance with Gnomeferatu, because of the mulligan.
Actually it is 2/26 in the best scenario assuming they didn't drew key cards and they went first (so you can coin out Gnomeferatu), but still pretty low chance that can be even a 0/26 if they got both at the start.

It is 28/30 all other things being equal, and assuming the cards they have in their hand are random
