Sindragosa is shit, if you open her then I guess is ok to fool around a bit with the card and in Highlander mage I guess it could be in the top 30 cards but as long as crafting her well just no... Keleseth decks without patches just lack a lot, I really don't get why people refuse to craft Patches, I know paying 1600 dust for a 1/1 can look terrible but Patches is so insane honestly, he was one of my first crafts and I've never regretted it so if you won't craft Patches ever then Keleseth is weaker for sure, the only deck I could see you playing is the super heavy demon version of Zoo that runs no pirate package or maybe something like handbuff paladin? But then there is the issue of the other like 9 legendaries and a million epics that deck runs so if you have them maybe Prince could work, and for Thrall well he's used in every Evolve shaman variation and he can really swing games so if you play a lot of that then Thrall is preeeeetty good if none of what I said is your case then just save it for the next expansion, we probably should have a month and a half (give or take) until the new expansion drops and by that time if you keep saving you could have enough for 3 legendaries or a bunch of epics :)
You can play both Keleseth and Thrall without Patches but he make them so much better. Patches is not all about face. In this meta he is great tool to respond to opponent's early presure. I would say you should craft Thrall because he is at least fun if he doesn't work for you. I am planning myself to craft him because I was lucky enough to open Keleseth in packs so I think you can't go wrong with Thrall. I have Sindragosa and had tested it with elemental mage. It's not worth crafting. It's just too slow and legendaries you get are not consistent enough.

So I just gathered enough dust to craft another legendary but i'm undecisive which one.
I'm contemplating between Sindragosa (I have Jaina), Prince 2 (I don't have Patches (and I refuse to craft it)) or Thrall Deathseer.
Is any of them really worth the craft (and why) or is it better to save up for the upcoming expansion?
Dont craft Sindragosa if you want to play competitive. It's too slow, and the legendaries too random.
I would say go for Thrall! Not only competitive but lots of fun too :)
I recommend Thrall too, just evolve it!
I always recommend to craft neutral legendaries first.
New expansion announcement is already next weekend, you might as well save those dust and wait for it....
