I've gotten a lot of dust the past month and have been tempted to craft the legendaries for a Paladin deck, but I wanted to find out if it was viable in the current meta. I would craft Uther of the Ebon Blade and either Sunkeeper Tarim or Tirion Fordring.
I also wonder if a midrange/control Paladin deck is viable without crafting Ragnaros, Lightlord. I already have the 0-mana heals card from Old Gods and Wickerflame Burnbristle.
Nearlly all the Paladin legendaries drop into almost all their archypes, so you'll get a little more run for your money if you like to play various decks of that class.
About your alternative, a Frost Lich Jaina deck doesn't really need any of the legendaries you mentioned. But there are many variants of the deck. Just today i played with Monsanto's deck and it's pretty strong, the only other legendary it uses is Alexstrasza.
Go for Tarim, then Tirion, then Malfurion then Uther. That is the best order. Tarim fits into ALL Paladin decks, Tirion fits into all but super aggro Paladin decks, Malfurion is the best DK, but Jade is going to get nerfed, and that card won't be touched, sooo... and Uther is awesome and a ton of fun. It fits into some Midrange and Control Pally. Control Paladin is my favorite deck of all time, it's so damn fun and awesome.
Elise the Trailblazer I would put at the top only because she is neutral and can be used in all the decks you want to play instead of just a specific class but I've had a lot of fun/success with the Control Paladin deck I made. The only problem is it has quite a bit legendaries in it because almost all the paladin legendaries are good. If you like priest then I'd say paladin is the closest to the class so you might have the most fun from it then. Tirion and Sunkeeper are musts for a control deck with it and double Stonehill Defenders are the best. Uther of the Ebon Blade is fun to play but I don't know about necessary.
I'm currently in a similar scenario as you right now. I have Uther of the Ebon Blade but I'm missing Tirion, Tarim, and happy Rag. I've been wanting to play pally so I have waited to craft the legends for awhile and finally have enough. I will probably craft all three within the next week or two and maybe Arfus as well as Wickerflame Burnbristle.
Also I would not recommend crafting Sindragosa atm, and Malfurious is worth the dust.
craft the ones you want to play the most right now. As someone who has nearly all of the above legendaries, If I had a second acc, I would go for tarim and then van cleef, q mage, and then the rest. You can play pala without tirion. The pala DK isn't as good as you think and it can't be played in the same deck with tirion and between those two you better craft tirion instead of the dk.
Go with Tarim and Tirion since it fit in most of paladin's deck
I agree with your post. There are lots of paladin decks that can use these cards and they are very good decks. Tirion is in the classic set and will never rotate out. Almost all paladin decks ever made can/do use him because its such a strong card that can swing games. The Paladin decks are strong even without the DK. The mage cards suggested to be crafted are very situational and only fit into a couple of decks. I dont think the mage DK is as strong as people think. Though the DK a little stronger with Sindragosa, so if the made DK is made you almost have to create it. But Sindragosa is slow because the legendaries it creates go into your hand, at turn 8 there may not be a lot of time to play them or you could get useless ones like nat pagle and/or lorewalker cho. In the end the play style of the original poster, and his card collection is important and they need to think about that as well.
I forgot to add I am interested in Uther's DK card because I recently landed Auctionmaster Beardo, so the gimmick OTK deck has my attention. I already have a Burgly Bully.

I have Arfus. Not worth it even in the deathrattle hunter deck I had. Just a bit too high in the mana, too low in body and the returns aren't as good. Better off with The Lich King, which I crafted after dusting a pair of gold epic duplicates.
Wickerflame is damn good, and I've been playing paladin Prince Keleseth decks that have him in (handbuff and aggro). Says a lot about Arfus when I'm running Prince Keleseth in more decks these days.

The alternative is making Frost Lich Jaina and either Elise the Trailblazer, Sindragosa or Open the Waygate.
I main priest, and usually play mage and control shaman.

Dibbity don't touch that!

You may want to consider the style of play you want to play and go from there.
I would say that Tirion Fordring and Sunkeeper Tarim are more important than Uther of the Ebon Blade, for any paladin deck. You can make a 'controlish' deck without Ragnaros, Lightlord, i would swap in a Lay on Hands, but if you don't have it experiment with other combinations of heals.

When I die, I want to go peacefully and in my sleep like my Grandpa. Not yelling and screaming like the passengers in his car.

If you are in your first year of playing please read this post.
Dust does not burn a hole in the jar. Be careful what you craft, especially before and right after a rotation.
