I'm sitting on about 3,000 right now, having kept up with my quests for a little while. I'm trying to figure out if I should spend some of it or just wait until the next expansion. Here's my collection right now:
Seems like Classic packs would be the least likely to yield duplicates for me and they'll never rotate out, but is it worth buying packs with more than half of the rares in hand? There are also reward packs handed out occasionally, so that collection is going to naturally fill up a bit.
As a general rule, when you do you stop buying packs for a specific set?
I usually do two or three rounds per week, but I don't really have the time to do more and I usually get 80+ back in rewards, so it doesn't quite burn through that gold mound.
I would recommend saving some of your gold for arena runs (perhaps 450 or so), but spending most of your gold on classic or Un' Goro packs seems to be the most logical decision to me. WOG will rotate out soon, and doesn't have a lot of synergies with the current meta, and any dust you get from the Classic or Un' Goro packs can be used to fill in that void.
I'd say go for classic or Un'Goro packs, since Un'Goro packs will stay for the whole year of the mammoth, and the year after that. Classic packs will never rotate out, you have less rare % than any other expansion and 9 more legendaries to collect than other expansions.
Though, the 2 other expansions will rotate out sooner if you want a more complete collection.
I'd say buy 20 classics and 10 Un'Goro packs, or wait until next expansion (2 months left I think)
Personally, when I got to about the point you are at with the classic set, I started hoarding all my gold for future expansions. Essentially, for both Mean streets and Un'goro I purchased the pre-order, and had close to 10,000 gold to spend. This gave me around 150 packs for the new set. 150 packs will generally net you all commons, most of the rares, some epics, and (hopefully) a handful of epics. You will also end up with a bit of dust to go towards getting the important cards you missed.
Personally, I'm sitting on a bit of dust as well, since I generally just try to play as much as I can with the stuff I've opened. Then once the meta settles down a little, and I've had the chance to play different decks and play against different decks, I get a feel for what I might want to play more, and thus what is more important for me to craft.
While you could still make gains from getting classic packs (in terms of filling out your collection), the real question is how many of those missing commons and rares are game changers?
Furthermore, if you play the tavern brawl every week, then you can consider that by the end of the year, you'll get about 25 or so packs. This means that your need to spend the 3,000 on classic now is lessened, since you'll have gotten those packs from brawls soon enough.
Anyways, no one can really tell you how to spend your gold/dust, you just have to do what makes you happy. My personal recommendation is to save them up for the next expansion. It feels really nice to open 150 packs at once too!

Unless there are specific cards you really want for a deck, I'd just save your gold and continue to collect your weekly tavern brawl packs for your classic collection. And even if you want specific cards, perhaps crafting is the better option. I would definitely not buy WOG or MSG, even though there is still probably 9 months left (which is a lot of time) in this cycle. Not because they are closest to cycle out, but because it's more likely that less of those cards will be used as newer expansions come out (power creep).
It really just depends on specific cards, and if you are having fun. If you just want to use gold efficiently as your title suggests, save it for the next expansion.
