Generally I just run mage but I really want to try some other stuff with the mechanics at work in this expansion.
Ramp druid I've always liked the idea of this deck but It's kinda lacked support to hold out long enough to be fun to play.
Discard Lock This got a little support with the last adventure, but only enough to create a zoo variant. I know everyone thinks it will be weak but I'm willing to give it a shot of I get the right cards for it.
Elemental Shaman This deck just looks like It'll be a lot of fun, couldn't care less about the quest though
Deathrattle priest and taunt warrior have me excited to try this new flavor of control. Mage has me excited for combo decks again. Oh and Shaman has me interested to try some funky control variants.
Mage is definitely the class I'm most excited about in the new expansion. Not because of secret mage, but because of the new quest, Time Warp. Imagine the combos you can do with that card and the strategy involved when playing and running it.
Paladin is my next most hyped one because Paladin has always been my favorite class and I hope Galvadon can carry Midrange Paladin back into the meta.
Warlock is my next one because I think handlock can become a thing again.
Also All classes with all archetypes and all posibilities, that's what a new expansion deserves.
There is 120+ new cards and playing with only 3 or less decks that includes also old cards is injustice for 120+ cards.

It will depend a lot on the cards I get from packs, but I'd really like to play Quest Warrior and Quest Priest. Gonna spend all my dust for those classes in case that I don't get anything for them (which will surely happen).
I'm looking forward to all the classes. Specifically though I want to try Elemental Shaman, Murloc Shaman (probably in Wild), Bounce Rogue, and DiscoLock.

Most of the sets aren't played.
Out of all the mean streets cards I have, I've played 15 of them ever.
it's your problem I guess. I'm playing with almost 100 of them because I have around only 100 of them if I have all believe me I would play all of them. Game doesn't exist for only competitive. All of us want different things from game and my main aim is collecting all cards of game. If I can get them I can play what I want. Also I think it's boring to play always same cards and same decks because of meta. I mean we don't need to play always same things around meta. It kills diversity and noone could contradict it so I will keep playing with all cards, I hope everyone can do the same thing with Un'goro and we can get some diversity for meta but I don't think that can happen because all of the "new" kind of players are only enjoying with winning It should be like they should enjoy attending to game, sharing some games with people etc.
Anyway, like I say above, all of us are anticipating different things from game. These are my anticipations.

Discard Warlock (pretty much all variants, I think initially I'm going to test some janky N'Zoth list), Buff Paladin, and Raptor Hunter are the decks I'm going to be jamming right out of the gate. Runner up is Shaman because Murlocs and Elementals, and because it's the class I have closest to golden at this point. I imagine at some point I'll be playing a lot of Taunt Warrior as well.
Right now I'm pretty optimistic about the set, I think everyone got some interesting builds to work with.

Priest - I really liked the idea of Deathrattle quest (I've already crafted N'Zoth for this shit). And I want to make a deck using Kazakus too!
Druid - BIG MINIONS FOR FREE. Who doesn't like it?
Hunter - Hunter will be a T1 again and not be being that cancer (I think).
Elemental Shaman all the way. So pumped.
Oh, and Paladin. Galvodon, please be Uther's saving grace!

I sadly suspect that Shaman and Hunter will dominate the meta, but the Mage and Rogue Quests are for-sure the most exciting.
