The cancer metaphor began as a description for decks that were seen as hard to stop and spreading quickly through the player base (much like the actual disease which is difficulty to beat and often spreads). The fear being that the "cancer" would spread and kill the host (the game). It is a really insensitive metaphor for those of us that have lost loved ones to cancer or have fought/are fighting that battle. Especially now that it is used as a slur against any popular deck, or any deck that gives a particular person trouble.
I like BemusedBear's response. Things like Aggro Shaman and Eboladin from past expansions; both were rush decks that had one goal that turned up everywhere for a while. Currently, I haven't seen anything that stands out; I've come across a healthy mix of classes and archetypes.
I had a Dragon Priest friend request me after I crushed him with a Demon Renolock Control deck. He said my deck was trash, it is a cancer and I should uninstall. Sadly it has become a overused slur that people will throw around to validate their loss.

Their is skill in making a good hearthstone deck, but I dont think it takes 'skill' to play the decks. Some decks take more experience than others (you have to learn all decks), but once you've played it enough Reno becomes just as easy to execute as smorc; then it just comes down to luck of the draw.
Unintercative decks. The best example is aggro warrior witch is decided on turn 1-2 in the mirror. Jade isn't cancerous it just crushes fatigue decks and some believe it was a questionable choice to create it.
What "cancer decks" means usually depend on who you're talking to and how much of a whiny little bitch they are. My idea of decks that kill the game are decks that are frustrating to play against AND overrun the game, Decks like Secret Paladin and Face Hunter back in the day. But if it became that big an issue I could just play the deck that counters them.
Admittedly, not everyone can do that, I have access to all relevant cards so I can build whatever deck I want. I'm sure there's plenty people who can't pour money into HS and don't have access to those counter decks. So they're forced to deal with matches they can't win, which kinda kills the point of even playing.

Long answer: The Hearthstone community is too self-entitled about many things. The word "cancer" is used liberally for any deck each person is annoyed by. Of course, being annoyed is completely subjective, and different things are annoying to different people. Therefore, aggro decks are cancer, because they kill you quickly. Combo decks are cancer, because they're uninteractive and don't fight fair. Control decks are cancer, because they answer everything you play and don't let you do anything. The most used decks are cancer, because you see them all the time and are super annoyed by them. The best performing decks are cancer, because they beat you and losing isn't fun.
But hey I guess Reno N'zoth C'thun Y'saarj Yogg Pirate Elise Rogue isn't cancer. Because you know, nobody plays it and it never beats you. Although on second thought that might be cancer too, because pay to win and all that stuff.
Yep, "cancer" is code word for "strong deck I don't like". In all honesty, things like a barnes y'sharj deck is the epitome of cancer because it relies on an rng insanely strong win condition. But if it doesn't dominate the meta it's not. Yet decks like jade druid and pirate warrior are "cancer" even though they have decisions and counterplay because they have high powerlevel and win rates.
Cancer decks are decks that you need to pour bleach in your eyes after you've seen the disgusting plays your opponent did that you have seen already for most of your games, yet unable to counter it.
No. 1 is Jade decks, it kills every control deck, 100% without any exception.
The next is the pirate decks, but it rises because of the jade, and it is the only way to beat jade decks. It loses steam quickly after turn 8, and is vulnerable to other control decks like dragon priest, renolock or control warrior, but those decks have no chance against the jade. So the primary cancer is jade, definitely needs nerf.
