Everything you hate about this game is caused by this. Curvestone, topdecks, low skill cap, face decks, first player advantage, burst combos, tempo RNG etc.
Everything they've ever nerfed and almost everything people have complained about boils down to this.
The player who controls the board already has a massive advantage in being able to dictate trades, but the fact that you can also go face basically makes it so as soon as you gain the board you start to gain massive damage advantage and then you can finish with burst, leading to incredibly dull and unsatisfying games where decisions don't matter and the game ends with both players having 5 cards in hand and usually a big board. Any non-taunt minion you play after turn 5-6 is usually useless. Every viable 5+ cost minion in the game has a battlecry or taunt, and it will likely never change because the basic mechanic of the game is absolutely broken.
I'd love to see a format where every minion has "face taunt" which would mean they'd have to be attacked before you can attack a player. Taunt minions would have to be attacked first as well, thus protecting non-taunt minions.
That would go a long way into making this game about decisions and a lot less about just playing on curve, cashing face damage and bursting people down with topdecks.
An alternative way to solve this would probably be to not make 1, 2 or 3 drops with insane power levels, so even if one player goes first, he won't be contesting the board with anything too strong, and they can be removed in the turns to follow. Making it an even match from that point on. They should also try releasing cards that have good effects, but they aren't immediate, our perfect on curve, thus making it so there's more tactics in the gameplay, rather than just a curve-stone style. But Blizzard really likes giving us stuff like Tunnel Trogg.
Making it so every minion has Taunt is awkward in my opinion. Games would be ridiculously long in minion-heavy decks, and it would just get boring after a point. There really won't be much of a strategy then, to be honest. Many deck types will suffer too, like Combo oriented decks, and Aggro obviously. Probs. Freeze Mage, or other spell heavy decks will become popular after a while.
You realize by giving every minion taunt, you are promoting spell heavy decks that burst down your face like freeze mage or maly style decks rather than minion based. Which you clearly are not a fan of... so what's your point again?
So, you want to change the core mechanic of Hearthstone, basically you're seeking for a completely new game. I advise you to try another TCG then, there's a lot of them out there with diferent mechanics.

If every minion has taunt, then midrange decks become king. Dr. 1 into Dr. 2 into ... into Dr. 8 would be the meta. You will hate it even more than the current meta, where midrange is already the strongest.

As much as I'd love to see a Taunt only game, your statement that it would "fix" burst damage is not completely true. Freeze Mage needs no minions at all. Alexstrasza into multiple spells is the biggest offender of burst, and taunts would stop nothing. If you were going to make a Taunt only mechanic, you'd want to make all spells only targetable to minions. THEN you'd have full control.

Dude, that's not going to solve the problem of the board control meta. Blizzard has already done a good job of bringing back some of the Aggro decks that have been stomping board control decks for so long, like Secret Hunter which I've seen do a great job of contending Midrange Shaman. There's only two reasons we even have a problem with Shaman dominating the meta: one, because everyone wanted Shaman to get better right before WoG was released as it was by far the worst class in the game back then, and two, because Blizzard nerfed the hell out of Face Hunter, the primary deck that was keeping board control decks in check, leaving board control decks like Midrange Shaman to dominate the meta. Oh, and two more things. First of all, saying every viable minion above 5 mana has Taunt or a Battlecry is a complete lie. What about Savannah Highmane? Cairne? Sylvanas? Ragnaros? Thunder Bluff Valiant? And second of all, giving every minion Taunt would make the game REVOLVE ENTIRELY AROUND BOARD CONTROL. It would just be a battle of who can throw the most minions on the board and keep them there the longest (imagine Zoolock with that shit). If that's what you call a good future for Hearthstone, I'm sorry but I don't know where that logic is coming from.
Every monster has taunt even thought its not directly written on the card. You cant attack face unless you kill all the monsters or use a monster with a special effect that can attack face ignoring the monsters.
Cards like dreadsteed can be changed if Blizzard one day thinks about going the YuGiOh route.
PS: in YuGiOh, no one plays something BS like freeze mage.
It is really riddiculous how well N'Zoth decks do in wild and how difficult it is to play in standard mode lol. I really can't explain to myself why Wild is more balanced than standard. Sludge belcher needs to be a standard card!

So everyone would just play Freeze Mage, right?
Sir, go play MtG. If this is what you want than that's more your style.

How long you have been playing this game? I reckon not long enough.

People who refuses to play aggro out of principle are even worse than people who play exclusively aggro.
One should seek to become a complete player and play all archetypes, including ones that he despises for whatever irrational reasons.

Now to think of it, there's this bad Hearthstone clone with Kungfu Panda that kind of have the mechanic you want. Maybe you ought to try it.
