OTK/Combo deck runs on the idea of "Struggle, but when you got your combo, you win"
Priest runs on the idea of "Counter your opponent's play, you win after depleting your opponent's win condition(s)"
Since Hearthstone doesn't have "Force your opponent to discard" mechanic and we have no method to deal with opponent's resources. Priest can only watch helplessly as his opponent assemble the win condition and destroys him, there's nothing Priest can do. It's like Freeze Mage against Control Warrior, but at least there's Tempo deck for Mages, while Aggro Priest doesn't exist.
People are fine with Freeze Mage being helpless against Control Warrior, because it's just 1 subsection of a class against another subsection of a class. But right here it's a whole class against a certain deck archetype.
What're people's thought on this? And let's focus on the topic and not Priest as a whole is in a sorry mess right now...
I just want to mantion that there's actually one combo deck that priest is favored aginst. Turns out priest actually is the very best couunter for this deck. I'm talking about the not so famous Cycle C'thun Warrior invented by Kolento. However, that's only one out of the many combo decks out there...
There IS a Priest OTK deck in Wild, but the combo is 6 cards and pretty hard to pull off. Chow + Chow + Herald + Baron Rivendare + Embrace + Circle. And you need an Emperor tick to do it. Can be pulled off as early as turn 9.

I simply disagree with your premise : Hearthstone is a game where you win by getting your opponent down to 0 HP, not by boring him out of the game. Simply put, Priest don't necessary have to counter their opponent every move, and should probably focus on a more pro-active gameplan to begin with.
If Priests currently struggles against combo, it is because they fail to put enough presure on their opponent, and fail to develop their own gameplan, as too many Priest deckbuilders are overly reliant on troll cards like Entomb : how can you hope to win against combo deck if your decks plays double Entomb ? Like many Priest spell, this is more of a tech card, yet i see way too many Priests players treating it like a staple.
To me, the #1 issue with Priest ... is Priest's players mentality : they keep treating the class like it is supposed to be the ultimate control/fatigue deck, despite : _ the lack of super efficient "removals" like Execute or Aldor Peacekeeper/Humility _ the lack of weapons _ the lack of super-heavy board clear (Brawl / Egality / Nova Doomsayer) _ the lack of anti-combo device (Armor / Ice Block)
But what if Priest were never meant to be a "true" control class to begin with ? What if we could use all the tools we have to deal massive damage (Divine Spirit / Velen + spells / Spawn of Shadows + Justicar...) and actually kill our opponent with them ? What if Priest was more a Midrange-ish / Combo-ish class all along ?
Most of my experience with Priest comes from "vanilla" days, where i earned my golden portraits piloting the list that gave Amaz his notoriety. Do you know how this list stood a chance, in a meta dominated by combo decks Miracle Rogues (and their 5 mana Auctioneer !) and Handlocks (both with 4 mana Leeroy Jenkins finishers) ? By playing Mind Blast + Holy Fire, killing them before they killed us...

Thouthands (from proplayers to simple innovators) TRIED HARD to make smth viable in all directions! (From aggro with murlocs/tokens/whatever, to midrange, combo and control). All this attempts ended up with semi competitive decks. Because developers gave to Priest very specific cards for too many archetypes. not universal (like Shaman and Warrior cards). So there is no singe archetype that have enough cards.
Dont think your priest experience from the past means anything now. Sorry.
There IS a Priest OTK deck in Wild, but the combo is 6 cards and pretty hard to pull off. Chow + Chow + Herald + Baron Rivendare + Embrace + Circle. And you need an Emperor tick to do it. Can be pulled off as early as turn 9.
That sounds like a very fun deck to try, although, a bit unreliable (but has Priest ever been reliable ?).
Still, with the lack of natural card draw, i doubt going all-in on one OTK is the way to go : it feels Priest should look more for flexibility (with cards like Alexstrasza) and/or redundancy, rather than always trying to pull the same flashy finish (Combo =/= OTK).
At least, that's how i wish the class will evolve, as it is a more interesting way to play than the boring "survive-draw-Thaurissan-win".
I play it in Wild (casual) for fun. It's got maybe a 40% wr, but that's partially because I have alternate win conditions.

would be a decent idea to make hero HP start at something and be allowed to heal over it. but i guess thatd make armor kind of redundant in this game.
