It seems you want to accomplish the same thing Big Druid did when Master Oakheart was available in Standard. But Druid had access to ramp (Wild Growth was 2 mana at the time) and Hadronox as a secondary win condition against slower opponents. They also used to run Bright-Eyed Scout for the high roll potential.
Your deck will work like a mixed Combo/Control deck. You need to consider your defensive options, how to draw cards and what dragons you will be using. Try using Sphere of Sapience to filter your draws. The dragons need to stay inside the deck for the combo to work. Also, note that Dragonhatcher and Oakheart share the same cost. Once you reorganize your deck with Lorekeeper Polkelt, there's a chance of you drawing the Dragonhatchers before Oakheart and that will ruin everything. The weapon can prevent that but i don't know how it interacts with Polkelt. My guess is that it will reshuffle the deck in case you put something at the bottom and that is also going to screw up the combo. It's very luck based.
I'd suggest you run some good defensive dragons like Primordial Drake and Evasive Drakonid. Since these are taunts and you are playing Warrior, you can also use some taunt buffs like Armagedillo or Into the Fray. Or you may consider other ways of cheating out your big dragons like The Boomship or Varian Wrynn (this last one is very unreliable if your deck has more spells than minions). Dead Man's Hand allows you to go infinite and that is an interesting win condition against Control opponents but Wild is full of aggro and OTK combo decks. So, if you want to win, you need to get on the board and threaten your opponent.
Against aggro decks just pulling the combo off will win the game instantly. But staying alive until you can play Oakheart is going to be very difficult. You will need your Brawls, Warpaths, Bladestorms and Shield Slams. Your basic toolkit of defensive tools against aggro. Weapons Project works well as a source of life gain and as an anti-weapon tech but beware of using it against classes with attack or weapon buffs (Pirate Warrior, Kingsbane Rogue, Odd Demon Hunter). Drawing cards is going to be a problem though. You can use Shield Block but you can't use other sources of draw (like Acolyte of Pain or Ancharrr for Risky Skipper shenanigans). One thing you can do is run some good weapons (Blood Razor, Reaper's Scythe, Supercollider) and use Corsair Cache or Forge of Souls as a filter.
Phew, that was a lot of stuff. In my opinion, you are trying to do something really cool but there are a few things that can go wrong and the deck is very greedy. But being greedy is what makes the game fun. Building the deck is going to be tough as there are a plethora of options available. Be sure to tell us how things went. I'm certainly interested. I'm a little embarrassed that I had not even considered that dragonhatcher mucks up the Polkelt sorting :/ that certainly makes it very janky to pull off...
I can confirm that sphere of sapience doesn't force a reshuffle, it literally puts the card to the bottom of the deck. So if you hit a dragonhatcher before oakheart, you can skip hatcher and not ruin your stacked deck.
perhaps polkelt isn't needed and maybe swap for a little more cycle and focus more on consistency with Dead Man's Hand? ^ which seems to be the more reliable combination correct me if I'm wrong, frizz + polkelt could be just as good.

While it's not my deck, I'm assuming it's the point of oakheart. He's guaranteed to pull out enchanter and dragonhatcher, as well as a taunt to protect the pair to give them a bit more chance to stick. And the point of polkelt is to garuntee a draw into oakheart.
To the point of the deck, I'd probably suggest removing n'zoth and dragonlord. As good as those cards are, they interfere with the main combo of the deck, as they cost 10, and you want oakheart to be your topdeck of polkelt. Should probably replace them both with primordial drakes, just to allow you more taunt of the dragonhatchers, as well as some removal if you're not drawing as expected.
Even memers want to win. 1 win condition that's only really just a swing turn is trash.
Yeah... We want to do cool things and sometimes that's enough if we manage to pull off the meme dream. But the satisfaction of winning while memeing is the best thing. I was playing a bunch of memes for quite a few hours in standard today. Stuff like Highlander Reborn Paladin (it's complete trash), Highlander Control Shaman with King Phaoris and The Fist of Ra-den (super fun and could become competitive at some point) and Big Shaman (not as hopeless as i thought). I managed to summon Al'Akir on turn 2 (Lightning Bloom + Coin + Muckmorpher) against a Priest while playing Big Shaman and it was really good to bash his face for multiple turns until he died.

Do you think it is feasible to run Vargoth to double up on the DMH? I know it's extremely greedy but greed is kind of the theme here.
