So I have recently opened the felosophy bundle while having in mind that I wanted to play Galakrond Priest. I happened to pack Polkelt but nothing else that would seem to fit into that deck unfortunately. I looked around and tried to find a decent Galakrond Priest list, but all of them looked so different so I didn't know which one to choose exactly.
I don't have Kronx so I thought since I just got polkelt I should replace Kronx with him. What would u change about this deck atm? I currently have no dust remaining but if there is any common or rare cards that u would include what would those be? Also, what epics or legendaries should I look forward to getting in case I manage to save up some dust?
Cut one acolyte for a second thoughtsteal since you don't have the other value generators like Lazul. Kronx is mandatory for any galakrond deck and u just have to get it to make the deck work. Cut a spellkin when you do get kronx.
Cutting one of the best cards in your deck that synegizes perfectly with Wave of Apathy, while still keeping two copies of it in your deck, is definitely not what you want to do.

The deck you have is honestly not too bad, and not too far off what you would normally see in this meta. I'd suggest save up enough dust for that second copy of Fate Weaver, but other than that you should be able to run with this for a while.
If you really want to improve it, something like this is what you could look at:
The Dragon package is a popular choice right now, hence why you put Cobalt Spellkin in the deck. And you don't necessarily need Kronx, some lists have cut him completely. He's still good to have, and I would personally still put him in if you had it, but you can get by without him just fine.
Not the same case with Highlander Priest, where he is a must have. Highlander Priest btw, overall is a better deck than Galakrond Priest right now, but obviously much, much more expensive.
This is the most flexible list i found and had great success myself. Many cheap spells with Pyro to clear small to midsized boards, no Galakrond cards, that are bad statwise and it makes the deck more proactive (no Breath and Death). And i'm not too sure about Polkelt and Thoughtsteal anymore. Nothing special about drawing cards from your opponent you might not even use. Let me know what you think of this list.

Personally that 2/6 isn’t as important as the resource generation sans galakrond is non-existent. I made the suggestions to be the most budget version possible while you guys just send the guy Netdecks...
Weapon removal is also a good thing to add. (Ps. You sure do enjoy using the comma!)
If you're serious about Gala priest, then I'll answer your question about what epic and legendary cards to consider saving for.
Kronx is a given, not much explanation required. Murazond is also a consideration for just about any priest deck these days, since the goal for priest is to generally out value your opponent in the late game. I'd also consider plague if death if for no other reason than to use it as a tech card vs libram paladin.
With that out of the way, I'm going to go ahead and say this. I don't think there's much tweaking you can do to make standard Gala priest better than a low tier 3 deck at best right now. Highlander Gala is almost always going to out perform it no matter what changes you make and it's currently only tier 3. If that doesn't bother you, then by all means optimize it as best you can. Just remember, you're likely going to struggle to maintain over a 50% win rate, depending on your rank.
As for suggestions on your deck as is, I kinda feel you're spreading yourself too thin without enough commitment to what you're trying to do. The one Fate Weaver for example doesn't seem to be a good fit. By that, I mean it seems you should either scrap it completely to make room for something more useful (like weapon removal) or add the second Weaver alongside at least one more invoke card to make it more reliable.
However, judging from your list, there's not too many other changes I can think of without it being a complete deck overhaul. I'd probably just add an ooze and a plague to help deal with bomb warrior and libram paladin. It is my opinion though that regardless of any changes, you're still going to struggle with that deck in this meta.
