So far it's done exceedingly well, far better than I expected. I've been playing in Casual to not tank my rank as I experiment, so I know it's not the greatest way to evaluate deck performance, but in the last 8 games, I've won all of them.
I'm not sure about the Zola inclusion. The idea was to bounce either Keleseth or Zihi back to your hand but in all of my games, it has yet to come into play. So, definitely could use some tweaking. Anyway, it's not nearly as terrible as I was expecting, it's actually pretty powerful.
I never thought about Surrender to Madness into Mojomaster Zihi.... Is that actually possible to Play in one turn? (I'm thinking about if Surrender to Madness destroys the 3 mana crystalls you've spend anyways or not)
You can do Madness and Zihi starting at Turn 9 or Turn 8 with the coin and it isn't bad.
As for Crowd Roaster replacements, I honestly think they are too valuable. If I were to replace any cards, Crowd Roasters wouldn't be among them.
Eggs are definitely a possibility as well as Mass Hysteria. The thing is, this deck doesn't use madness until the late game. I've played around with madness early and midgame and it fails miserably. Even coining madness on 2 so you only burn 2 mana is just way too slow. So, I feel that eggs may end up being dead cards for a majority of the game and that would be bad.
However, I did just hit Rank 5 yesterday with the deck, so it is working. I'll keep playing with it and seeing what kind of tweaking feels right.
I haven't been playing Surrender to Madness early or mid-game, I've been keeping it as more of a late game. TBH, I'm not entirely sure if that's the best way to play it but it's been working out for me so far. However, the few times I've tried super early (ie: coin on T2) it's been disastrous, so at the very least I'd wait until you have at least 6 or 7 mana. I usually wait until I have 9-10.
Zola the Gorgon is kinda meh and pretty much the one card I wasn't sold on. I've been playing with Harrison Jones in place of her and he's actually doing work. Pretty good against hunters, warriors, the occasional paladin and even the warlock legendary weapon. Also, the extra card draw is really good in this deck, especially after Keleseth/Madness to overwhelm your opponent. I may just need to edit her out of the deck and replace her with him (in fact, gonna do that right now I think). But you may also want to try Leeroy Jenkins as well for a big finisher. A solid 9-10+ charger can't go wrong.
As for replacements for Curious Glimmerroots, that's really hard to say. Card generation and tempo is extremely important in this deck, so maybe try Stonehill Defender. I considered them when first building the deck but I just love Curious Glimmerroot so opted for them instead. If you have them, maybe try Twilight Acolytes. You already have the dragon synergy, so destroying your opponent's tempo in place of your own may be enough to offset the lack of card generation. edit: It's worth noting that after Madness, Twilight becomes less valuable as you're likely gonna have to swap attack with your own minions to keep from buffing your opponent's. I'm unsure what the best approach would be, so just do what feels right.
You're missing some pretty important information. In the games you won, how many times have you actually used StM and not just played minions on curve like a worse version of the old spiteful priest?

Most of them.

i would cut Mass Dispel and a Crowd Roaster for x2 Mass Hysteria
But no Bwonsamdi, the Dead

Could be a cute combo
