That depends a bit on what kind of shaman deck you are up against.
Evolution decks: These win by swarming the boad, then getting high board value by evolution. The best way to beat them is to keep them from swarming the board. That means cards that sweep the board destroying multiple small targets or cheap high trade value minions you play early. Keeping the board down limits the advantage the evolution cards offer.
Midrange decks: These guys are winning based on high value minions hitting the board on the cheap, or at least a turn early due to overload. There are two ways to stop them. One is to swarm like evolution or zoo. Of you put them on the defensive early, they can't get good temp trading with the beef sticks and you can take them out before they realize the full value of those monsters. Not easy to do since they also have taunts but it can work. The other is to use cheap hard removal of some kind, aka removal that doesn't rely on damage. Every class has at least one card like that, some more than one. Typically these are spells.

Do you feel like 2* Forbidden Shaping is really necessary ? You run 0 three-drops, you might want a Harvest Golem or something. Just my thoughts seeing the list, I didn't test Forbidden Shaping but it didn't impress me the few times my opponents played it.

I used to be a control player like you, then I took a quick shot to the knee.
N'zoth Pally, Zoolock and C'thun druid. Many people lose to Aggro shaman because they Mulligan wrong and are afraid to use coin/innervate, but with shaman you MUST get things on the board quick.
Zoo is the best counter :) , except that time when the shaman have both lighting storms in hand (for midrange shaman) , for SMorc shaman counters are control warrior , priests , paladins except that games when the shamans have perfect hand.

I can see where you are coming from. I can say it is not in fact necessary, but personally i love the card.
One reason you pointed out yourself. It allows for great flexibility in your mana curve. It is basically a wild card minion you can play at any time. Occasionally i may play it as my 3 drop; usually i get something decent. It can fill in for you both to give you something to play when you would otherwise have nothing, and it can help you get the most out of your mana. In addition, if you can keep a mental library of which high-cost minions are most beneficial to you in any given situation you can if possible cast it with a specific amount of mana in an attempt to get something that will change the game in your favor.
This works quite well with high-cost minions as there are much fewer and many good legendaries are up there.

Yes, i know you won't get this every time. But i have gotten these several times in this situation and it won me games. The single card played from 7-10 mana can win a game if they have no board or removal. The more mana you spend with Forbidden Shaping the better the result i find. Just remember it is still random so you may not get that ideal card. Would you rather be stuck with a dead card instead though? You can save these things until you really have nothing to play.
Also, you mentioned Harvest Golem. The fact that Museum Curator is in the deck adds more flexibility to the deck. I try to always mulligan for these. It is a great turn 2 play that can very likely give you a 3 drop if necessary. Which is another thing, depending on what you are playing against you may not even care about having early drops.
This is all my opinion of course, but i have been doing very well with this list. The games i lose are usually all very close and could have gone either way. It helps that i already have a feel for it though. I thought i would suggest it because priest has great removal. Whatever you play it may be good to include at least one Acidic Swamp Ooze. Good luck!
As a longtime Shaman player, I can tell you that in the current meta Zoo and Paladin are going to be your best bets against most Shaman decks. However, it's important to realise that a Shaman with a good hand beats basically everything (just like most aggro/tempo decks with a good hand).
