My ideas (hunter is my favorite, then Paladin, then Mage):
Number 1 is a bit boring
I like number 2, though I think you could make the battlecry "Craft a zombeast" and the deathrattle "Put another copy into your hand". Would be a bit more fun.
Number 3 is OP, and with the Paladin meta, you won't get many votes for it to be frank

I like saltscale pilferer effect, altough i think it's graphic is not connected enough with swapping weapons.
I like the effect, but it seems to strong now. You basically discover 3 cards. To be balanced it could cost 9 mana and have 6/6 body, just as 3 Stitched Tracker combined. As for 9 mana no one would play it, deacrease stats, please.
I actually think it is fine this way. Elise is a 5 mana 5/5 and adds 5 cards to your hand. This is similar, also with random effects. Remember the beast can only cost 5 maximum anyway, it is not that you will and up with King Crush in your hand.

Elise is not a 5 Mana 5/5, add 5 cards to your hand.
At best, Elise is a 7 Mana 5/5, miss a draw, and add 5 mediocre cards to your hand.
One card draw is about 2 Mana worth of cards currently.
So Elise is basically 9 Mana 5/5 then. Your card gives fewer, but stronger cards overall, with the same body, and without missing a draw. It should probaly cost about 8 Mana for this reason, to not be insanely broken.

- title - it feels more balanced in the context of a token dudu deck. I personally think, that it may need a small health boost, but I would warmly advise you to ask others for their opinions regarding this part.

Tokens:
Omniscient Sensei- To me it's a bit too powerful to give all minions in your hand this ability. That said if it was me I would go for a deathrattle that would affect your minions on the board (by adept them) or an effect that would affect maybe one or two minions in your hand. I'm liking the idea though.
Scrap-Bot- This would be good back in the GvG days, however when you see the number of Mechs there are in Standard (if I'm not mistaken the total is 5), it doesn't seem worth the effort. However that said, this could be more useful in Wild decks so... to me it's a bit risky to enter, but that said if there is ever a Wild Card Competition, you may want to hang onto this card.
Little Rascal- OK this is a nice idea simply because it's a minion that sticks onto the board, meaning it gives players a hard time to deal with it. Plus you can use the rascal to summon Papa, which means dealing 4 damage to minions which could be very helpful at times. So out of the three I think I like this one the most.

ZiombalaBoms - OK, I'll make it cost more. Inb4 the idea of the first design was gaining +2/+2 and like you said, it felt like a Grimestreet Enforcer. Regarding the power of this card - I thought that it was reasonable since shamans lack good card draw options and this card was a legendary (single copy). Meaning that finding it and getting immense value wouldn't happen that often. But after thinking about it, I think that you both were right. Would it be better to make it a 5 2/2 or a 6 3/4? Or to make the card an epic one and narrow the number of the adaptations to one?
Fortify - Like Ziombala said, the idea was how "apprentices inherit traits of their sensei". In order to keep the flavour, I wanted the students to be the minions in your hand. I'll take your advice in consideration, but I also like the sensei. So I'm planning to correct the design of those two cards* and I will make a last bump.
* The rascal mentions a 1/3 Papa, but in reality he's 3/1.
I think that making sensei as similar as Grimestreet Enforcer, would help people to evaluate balance. So i would propose to make it 5 mana 4/4 with only one adapt.

Balance wise might need a mana increase to 6 or health decrease since you essentially generating 3 cards.
