Last 2 weeks I'm playing mainly Zoolock, and I'd like to know what legendary would increase the quality of my deck more? I'm inclined to make Dr Boom because he plays in a lot of decks and because he's the most balanced card in game
If you plan on playing any other deck (which includes your Zoolock), I'd recommend crafting Dr. Boom because as you already mentioned he's balanced af.
Presuming you already have all the Zoo rares? Doomguard, Argus, Void Terror, Knife Juggler, Imp-losion are all probably more important than the legendary (well, maybe not VT). To that end, I'd say Boom, since Doomguard is already a target for the Voidcaller deathrattle.
Alternately, consider Sylvannas. While Boom is likely better (and better for more decks), people are often more prepared for Dr. Boom with a BGH. Sylvannas, being somewhat unexpected, can be more disruptive. Particularly if they waste silences on lesser minions (and Zoo has a lot of silence-bait). The best cases from Sylvannas are huge, possibly game-ending swings. Stealing something like an Ancient of War against a druid might just be GG. Dr. Boom can often be overcome, but he's very consistent. He's probably the right one to craft, but it's worth considering Sylvannas.
What are your goals though? Are you gonna climb to legend or you just playing with no goals? If climbing then figure out what deck you'll climb with and make the choice. Zoo lock all the way? Malganis. Dicking around? Dr boom.
Make a goal for yourself then decide which card to craft.

Actually you'll find that if you play Mal'ganis in your Zoo deck it makes no sense to exclude Dr. Boom. A more late-game oriented Zoo deck needs Dr. Boom to transition into the later turns and not run out of steam between then and Mal'ganis. It's not every single game that you can get the latter out of Voidcaller. The reverse isn't true, as Dr. Boom is good in any deck that's not face hunter or face paladin or face warrior or face mage or face shaman or face priest or face zoo. (Yes, they all exist, look them up.)

Dr Boom crafted, I replaced my only owl for that, I don't remember a game it was useful, if you think my deck has better replaceable cards feel free to write
Boom was the right choice.Pesonally I would look for a place for the Owl and the second Creeper (I would take out the Wrathguards).But it depends on what you are playing against, maybe if you can afford to be that aggresive they are ok, is just that whenever I play zoo I get one hunter after another.
-2 Wrathguard +1 Haunted Creeper +1 Ironbeak Owl; -1 Dark Iron Dwarf +1 Bane of Doom. If you eventually do get Mal'ganis either Flame Imp or Void Terror gets replaced by it, probably Flame Imp.

Dr. GG would be better. While Mal'ganis is would be better for any form of Warlock, Dr. Balanced is too good to not craft.
