What would their card rating be? And wouldn't they actually fit some more deck if they had Taunt. Like how amazing would it be, like being actually viable?
Probably not. Anub'arak would be a good minion in the right class, say, Warrior, a class that can manage a late-game heavy minion. Rogue simply doesn't have that capability, and Anub'arak having Taunt, especially with 8/4 stats, would not change anything.
The Skeleton Knight is just bad because the Joust mechanic itself is nothing but RNG, and even if it works, an awkward 7/4 (for 6 mana!) will not help you gain board presence. Maybe in a fringe Arena situation where you constantly keep on top decking it as your opponent kills it nearing the end of the match, but in any other match up, no. Our decks have become so refined that stats glued to a card simply won't work anymore.
7/4 is pretty much the worst high-stat spread possible, outside of things like 7/3 or 8/2. You're susceptible to Big Game Hunter, Power Word: Death, and also Piloted Shredder, Flamecannon, and Azure Drake. Salty Dog is utter crap at 5 mana; being able to cast the Skeleton Knight for 6 over and over again does absolutely nothing to negate his piss-poor stat spread. The value gained is almost never worth the tempo lost. Anubarak at least has a deathrattle that offers some immediate value, but the stat spread is still abysmal, especially for a whopping 9 mana. The only minions with a spread like that I'd even consider playing are Rend Blackhand and Stalagg - Rend because his battlecry is legitimately great (and even then he's barely worth the slot unless the meta is hopelessly oversaturated with control decks with tons of legends), Stalagg because his deathrattle is legitimately great and his cost is relatively low.
I mean, seriously, quick value comparison. Anubarak vs. Ysera. Both cost 9 mana. Ysera fills your hand with game-ending cards and is very hard to kill; Anubarak gives you a 4/4 and a chance to cast him next round. Yeesh.
Wouldn't be unreasonable. From the little wow lore I can remember Malorne held off a demon invasion (or something like that) to save, well, the wild or something, I don't remember, but by the lore I remember he could definitely give up 1 attack or health to have taunt.

Fatigue druid might actually be viable if Malorne had taunt.
