I've always liked running 1-2 EE's in my shaman decks up to this point but lately i've noticed i'm rarely getting very good value out of it. Right now there's just so many rather cheap counters to it with every hunter deck running silence/deadly shot besides the obvious Black Knights, Big Game Hunters and Hexes etc. If the opponent nukes it instantly with BGH for instance, it's very hard to come back from the 3 overload you get next turn which obviously is worse the earlier you play the EE.
To the OP, I understand using EE is risky as hell in many scenarios, you gotta know when to use them very well, so you have to bait removals before droping EE. Many people run Big Game Hunter and The Black Knight nowadays too, so it can be hard. But if they can't remove it, he's a fucking monster. I'd run Earth Elemental x2, because at least you can bait removal with one, and keep the other (in some cases you'll get both screwed, but shit happens). Be careful with AoE removal kings such as Paladin or Warlock, got it "easy" against Earth Elementals.

What's your opinion on the card currently?
Play it late, after baiting silences, etc. This is not a card meant to be played on turn 5.
