Novice Engineer is one of my personal favourites. Early body with some draw? Yes please. Definitely agree with the Shieldmasta as well though, great card, and very efficient, and reliable.
If you can manage to grab Hogger and keep him alive for a couple turns in arena it is pretty much a done deal for you.
There are quite a few legendary cards in addition to Hogger (Illidan, Ragnaros) and even some commons that will win you the game if you can keep them on the board a few turns.
For Druids, innervate, bite, claw, and Druid of the Claw are always solid choices. For priests I feel Mind Control and Greater heals ( if you can grab an auchenai soul priest even better for greater heal!) are very good picks too. They can keep your enemy in check from wiping you with big minions, and heal you up if you get low. With the soul priest, that can easily turn into a 20 damage spike on the enemy if your foe has 10 cards in hand.
I find any Charge ability minion is quite good for arena decks, some quick damage and forces the opponent to use a move killing it the next turn. I know that you wanted a specific card, but I only really wanted to say Leeroy! That is, if you have a way to knock out the summoned minions.
Silence, Charge (direct damage spells), taunt monsters in that particular order.
Silence - prevent both charge and taunt. Charge - to deal direct damage if there is no taunters. Taunters - to protect yourself. Other card choices are situational. IMHO
Against weapon using classes I'd say Acidic Swamp Ooze is incredibly important.
I'd love to see another format like arena be added in the future where you draft 35 cards, build a 30 card deck, and then play best out of 3 matches versus people where you can change up your deck between each game. Fortunately the Acidic Swamp Ooze isn't too shabby even if you can't use it's battlecry.

Id have to agree with OP Sen'jin is a pretty nice basic card to have in just about any arena deck. mana cost aint bad, plus it has taunt.

Silence is very strong, but I do like Wayward Adventurer.
Nozdormu wins you every game where you opponent has to go to the bathroom on turn 9.

I really like Draw cards and lots of low mana cards. I like getting an early lead and trying to keep it rather than wait for late game.
I 100% agree with Shieldmasta, I would pick it in just about any situation
