You probably just have to accept this is a weak matchup for you, not much you can do as a control deck against otk strategies, even if there were a strong tech against specifically Sif, it would only make you weaker against all other decks, and as control you are trying to counter aggro. Better to improve your strength than mitigate your weakness.
Dirty rat will win the game occasionally and is otherwise fine against aggro.
If you still wanna go through with your idea here are some suggestions that I think might help against Sif mage and also not weaken you too much against aggro. Ordered from best to worst imo :
-Speaker Stomper : Might have to time it properly if you want to delay the combo turn, but also a nice effect in general against mage, and tradeable is great
Cult Neophyte : same reason, but not really sure if one is enough to stop the otk
-Disarming Elemental : pretty self explanatory, try to hit a cheap damage spell with it, against aggro try to hit something cheap or low impact
Blademaster Okani : that's a hard predict for the combo turn or it's useless against Sif mage because they have a lot of cheap cards, but if it works.. well it works, you got one more turn, and it's not awful against aggro. Not great but, not awful.
Your best chance really is Dirty Rat their Sif. Your deck doesn't really do anything to threaten them or prevent them from assembling the OTK otherwise. You can also try running The Harvester of Envy alongside a thief package to increase your chances of bricking the combo, but that requires adding lots of bad cards for the chance of maybe bricking their combo. There's also the Plaguespreader direction by running cards such as Undying Allies and Bonecaller, which is funny but also seems pretty bad.
If you're open to trying other decks, Blood DK's sustain and Vampiric Blood allow it to amass enough health to tank the OTK, plus Patchwerk is yet more disruption to potentially delete Sif.

Rats and Theotar are about the best you can do without ruining other matchups, and it's usually a pretty decent strategy. Or Harvester if you run a lot of stealing, then you can also take cards like Reverberation to screw the combo.
Also another great card is Ignis with the 10 mana armor weapon. If you are allowed to play it then you can usually get enough armor to be out of OTK range.
The matchup is pretty even from my experience. Though I run a version of Priest with very few minions to increase my odds of getting more copies of the aforementioned minions.
Sif is empowered by playing spells from each school of magic, maxing out at 7 (add in her innate +1, she maxes out at Spell Damage +8). As such, the goals of the deck are to 1) Play spells from each different spell school, 2) amass burst damage in your hand, and then 3) Play Sif and send it all face.
There's no dedicated "Combo" in the deck because its burn pieces are rather disposable. The classic example is Forged Molten Rune and an Arcane Bolt for 33 damage from a max power Sif, though the upper ceiling of damage can get much higher when discounts get involved.

Yeah it's not rare to do around 60-80 damage if you time your mana discount properly. Not even Control Warrior or Blood DK stand a chance against that. It's only weakness is Dirty Rat, Theotar, the Mad Duke and Aggro.

(Was hoping that Sif will be nerfed in the next patch, but oh well)

Coilfang Constrictor : same reasoning as blademaster + you can have 2
Algalon the Observer : Try to put sif at the bottom and don't use the HP again
Other (worse/unplayable) options are Soul Seeker, Plaguespreader, Merch Seller, or mill strategies.
You can also try to steal it with The Harvester of Envy + Disguised K'thir / Identity Theft / Murloc Holmes, I think the other options are too unreliable compared to these 3.
