Velen itself is a perfect example, he's core on some of the best decks on HS history but after that he just disapears for a long time. Cards like Catrina Muerte and Zerek's Cloning Gallery are incredibly powerful but they need the right support to actually be played and due to priest's lame classic set they don't have it right now, this usually changes by the end of the standard cycles and Priest gets to be powerful or annoying (or both) just before every rotation. Other legendaries like Princess Talanji, Madame Lazul or Chameleos could be nice tech options or extra tools on the right deck but they are not like deck defining or anything.
Priest legendaries are like, just craft them when they're are good and accept that they could be unplayable over the next expansion and become absolutely amazing and must-craft later on, you never really know. So my advice is just to wait until one of its legendaries suddenly becomes good and play all you can with it on that current expansion.

Currently there are 2 priest decks that are worth playing:
1. First we got Taunt Ressurect Priest which, as its name suggest, is based around playing beefy taunt minions and then ressurecting them and it has a divine spirit + inner fire package to close slow games. The deck utilizes Catrina Muerte and I would say the card is core to that deck but sadly the deck is not good enough. You can probably pilot it to legend and it should be decent but it'll for sure cost you a lot of time and some game you'll just get rolled over. Fun deck but as I said not super solid.
2. Nomi priest is probably the best choice you got if you're planning to play priest this expansion, it doesn't run any other lengendary but Chef Nomi and he's a neutral legendary which is also playable on Rogue and Druid (Druid not so much honestly). This deck is very powerful but it's kinda draw reliant, some games go smooth and some others you're just stuck with a bunch of spells and nothing to do with them. Still, with a correct piloting it's a super poweful deck able to reach top legend ranks.

I've actually got a resurrect priest that I use for quests 😅 Its not the best by far but I've won a few games with it. As for chef nomi I've got him but only ever used him in a control warrior alongside elysianna. I can definitely give that one a go!

Wasn't Raza Priest one of the best decks on HS history? or do you have a memory problem, cause as long as I can remember that was one of the most complained about decks ever and people called it OP and brain dead every single day until it got nerfed.
Also wasn't Gallery Priest the best deck early on last expansion and by the end wasn't it still pretty decent? Like decent enough to be solid tier 2? And wasn't Velen absolutely core to that deck?
A card being core on at least 2 of the best decks of HS history (At least on their pocket expansion meta, not saying overall) seems enough for me to call it must have card in some of the best decks on HS history (Again at least on their particular meta of said expansions, which is the only thing that matters really). You gotta chill bro.
My suggestion would be to think about decks you want to craft rather than cards you want to craft. Whether you like the cards and whether they will be useful elsewhere is an important consideration, depending on how much dust you have, but if you don't immediately have a deck to use a card in you should wait on crafting it.
If you enjoy priest, the most promising looking priest deck right now is probably the deck with mass resurrection, catarina muerte, divine spirit/inner fire, and a bunch of big neutral taunts. There is also the chef nomi miracle deck if you are into weirder and harder to execute strategies.

Priest is a class that is meta dependent. Malygos goes well with priest.

Craft decks, not legendaries. None of the priest legendaries are worth crafting right now.
This, honestly this. People should not only be focusing on crafting legendaries but cards to complement them, which include a lot of expensive epics.

You can cut Barnes and Gallery. Cutting Emperor is possible, but... it can be too much.
