That doesn't make any sense. Why would it keep (gain) the enchantments cast on Prelate? Based on the card text, I would think it gains "shuffle this into your deck, it keeps any enchantments," referring to what you cast on Undatakah.
Card text says "shuffle this into your deck." and "it keeps any echantments." That would imply "this" and "it" refers to itself, not specifically to Prelate. As in Shudderwock, when you repeat generic card text (such as "summon a copy of this minion") it refers to itself.
There's no way the Undatakah battlecry gives it the buffs you cast on Prelate. No effing way.
edit: I also hate Peter Whalen's garbage response. "Hey can you please explain how this works?" "It works they way you'd hope! ;)"

No what he means is that it will keep the deathrattles it has gained. So when you shuffle it back into your deck, next time you draw it, it will already have 3 deathrattles, and then it will gain 3 more from the battlecry when played.

Life before death. Strength before weakness. Journey before destination.
Considering that Whalen didn't even know how Ice Walker interacts with Spirit of the Dragonhawk in the recent stream, I wouldn't put too much weight on his statement.

Well the battlecry itself is not an enchantment but the effect of it is. To simplify it just think about it like if a minion had battlecry: "gain +1/+1", the battlecry IS NOT and enchanment but the +1/+1 IS, so that means that Da Undatakah's deathrattles gained through its battlecry are as a matter of fact enchantments and thus if Da Undatakah copies Immortal Prelate's deathrattle he would then be able to shuffle itself infinitely and keep gaining 3 new deathrattles everytime it comes into play, which means you can go infinite with him unless it gets silenced (it honestly looks like the silence heavy meta from KFT and K&C could make a comeback).
I was also wondering how it works with Zerek, Master Cloner. I don't expect Da Undatakah to keep the deathrattles he gained with his battlecry if he is resummoned with Zerek's deathrattle but you never know for sure with cards like these.
Edit: just went through all deathrattle minions and I'm really curious how this works with Pyros. Pyros' deathrattle reads: return THIS to your hand as a 6/6 that costs 6. Getting another 6/6 Undatakah seems preeetty good.
Also, another deathrattle minion in wild that has very good synergy with Da Undatakah is Sergeant Sally, which is a card I would very gladly see more of.
I was chatting with another user about this in PM and I'm gonna repost a point here.
We really need clarification from Team 5 as to what constitutes an "enchantment" if they're going to keep using that word. And by clarification I mean specifically what is and is not an enchantment.
It was never a problem before because, as Kingsbane was the first and only card with that text, it was obvious what it meant - it meant spells cast on it (or minion based effects that specifically referred to "your weapon" unconditionally), and the only spells you could cast on weapons were beneficial.
We need clarification now.
Does it mean any spell cast that targets that minion specifically? Only spells that benefit it? Only spells that give certain effects that are considered buffs? Only spells cast by you and not the opponent? how about effects gained through minions? Are "until end of turn" effects considered enchantments? What about minion based effects that remain until that minion leaves play (like Dire Wolf Alpha, Flametongue, etc)? What about minion based effects that target it in a negative way?
Are we considering "enchantment" anything that affects the stats or anything that could be a keyword? If that's the case, are effects that damage or kill a minion considered "enchantments"? Are enchantments only positive effects? What exactly does "positive effect" mean?

If Zerek dies, no matter if you activated zerek's deathrattle, and you play Undatakah, he will gain his "passive" deathrattle and you will need to cast a spell on Undatakah to activate the deathrattle.
Yes that much is clear to me, but what I'm not sure about is if Undatakah will keep his gained deathrattles after he is resummoned by Zerek's deathrattle. I don't expect him to but who knows.
It’s battlecry isn’t an enchantment. It’s battlecry adds enchantments to it. Just like if you played a fungalmancer next to an immortal prelate, the immortal prelate will keep its bonus stats as an enchantment.
My question, can it have multiple immortal prelate battlecries go off? Can you have it shuffling five copies of itself into a deck?

I think you’re right about spells or other enchantments cast on Prelate not saving for Undatakah, but I think the question was specifically if the deathrattles gained by Undatakah’s battlecry count as “enchantments”, which Peter Whalen said they do. This, combined with Prelate’s deathrattle, will indeed save all deathrattles gained from previous Undatakah’s, as well as NEW enchantments cast directly on Undatakah.

My understanding (and I can definitely be wrong) is that an enchantment is any effect that you can see when you scroll over the minion/weapon. So for example, if a minion is affected by Prince Keleseth's battlecry and you play it, if you mouse over it it has "Keleseth's Blessing" which is the +1/+1 buff. Or if you use Equality, the minion's will have "Equality" which is the setting its health to 1. Or if you played Blessing of Kings you have "King's Blessing" which is the +4/+4 buff.
So in the example of Da Undatakah, let's say you play it after Tirion Fordring, Cairne Bloodhoof and Immortal Prelate died. It would activate it's battlecry, giving it the enchantment of those 3 deathrattles. When it dies, it would then equip Ashbringer, summon Baine Bloodhoof, and shuffle itself into the deck with those same 3 deathrattles. Then when you play it again later, it comes into play with the 3 deathrattles from before, but then gets them again from it's battlecry (making it have 6 deathrattles total). So then it dies it would equip Ashbringer twice, summon 2 Baine Bloodhoof, and shuffle itself into the deck with all 6 deathrattles.
Considering that Whalen didn't even know how Ice Walker interacts with Spirit of the Dragonhawk in the recent stream, I wouldn't put too much weight on his statement.

I imagine it to work this way as well: your Da Undatakah starts with its default stats and you have to buff it up seperately.
Infinite undatakah is a pretty neat combo. Still not wanting to outright enchant it but im hoping more i pull it.
