Nothing is a safe craft even after all the cards are revealed. If you are on low budget you have to usually wait 1-2 week before risking crafting anything, but if you have some ressource there are some good legendary that should be playable.
I like to have all the "special" legendary cards (heros, weapons, etc). That said I only have four of the Quest cards from Un'Goro (I was F2P until KotFT when I started to buy pre-orders). So I'll likely craft Dr Boom hero card if I don't open him, and I'll also likely craft Awaken the Makers because I personally think Quest Priest is going to be great if you can combo Reckless Experimenter and Devilsaur Egg, plus Dead Ringer is a great addition over Loot Hoarder for more specific draw.
But the Experimenter + Eggs combo not only helps with quest completion but gives the deck a nice tempo swing if you can play them all together. Might also have to spring for Archbishop Benedictus too. Been wanting him for a while and just never had enough reason to do it.
I know I'm naming two legendary crafts not from this set, but it's the new cards from the set that make me think I finally want those cards enough to craft them.
EDIT: I also want Whizbang the Wonderful. Just see this as a fun card to see how far I can meme my way up the ladder with him. I normally don't give a shit about golden cards since I am still a bit of a budget player despite pre-ordering packs, so a lot of the time I dust gold legendaries I get but don't want and then craft a regular I do want, and dust gold cards if I have two regular of them already. But the thought of spending 3200 dust for 18 fully golden decks... It's honestly tempting! I mean, the value! THE VALUE!!! lol
I'll craft a golden whizbang. Not because it will be good, but because I need it. I'll even dust my regular whizbang to get it golden. Floop can suck it.
i have a second account with quite a bit of dust/gold stored.. Enough to craft a couple of decent expiremental decks.. so I’m going to go that route, and use the gold in my main account for arena runs only, until I know what to craft..
thats why I’m pretty hyped about the expansion.. I don’t have to choose between being safe and not crafting, and trying new cards..
i am worried about Druid though.. could ruin what otherwise appears to be a pretty worthwhile expansion

A sound strategy.
I am just going to open my packs, hope for the best and see what I get/howmuch dust I get from dusting gold cards etc and then take it from there.
I am hoping I can put together a Warlock deck at the very least as I already have most of the warlock stuff you could need right now, only would need newer cards.
Beyond this I'm just hoping I get the Rouge cards I would like to mess about with so I don't have to spend dust on them. Then I can fill in some gaps in my collection for rogue and get some of those legendaries I need to try out new stuff.
Then finally I'm just hoping that either one of these classes has a ladder viable deck I can use for getting my card back and stuff each month.
I am a bit worried about Druid though... I may even end up playing druid if I can afford it as pretty much all their decks look really interesting (if not slightly busted and unfair, lol) and they just seemed to get a whole lot stronger.
We still have all the Warlock cards to see pretty much though, so maybe they will introduce more control lock tools and anti combo tech that will make the class shine this expansion.
I guess this is what I'm hoping for the most.

at least if you get a golden of something you're never going to use, you can trade that in for a legendary card you really would like.
Golden's are beautiful and all, but they are worth a lot of dust.. I'd more often than not rather just get to pick a legendary than have a random golden one.
I do like Goldens that give other Goldens though (I have a golden blink fox that I kept because I needed the card and I like how it gives me golds back)
Golden n'zoth, rin, Gul'Dan etc would all be awesome... I can imagine Golden Whizbang would be as well as your entire deck would be gold. I think a lot of these cards you will have gold anyway though as they are recipe decks that use pretty basic cards I think.
