Sometimes when I use Cryostasis on my 0 attack totems it will immediately unfreeze them and I can attack with them next turn. Other times they are frozen for the full duration. Why is this happening?
Freeze essentially means "Stop an attack." If your totem could have attacked on the turn that you used Cryostasis on it (regardless of whether it had any attack at all), then you technically stopped its attack, which triggers the end of the freeze on turn end. By contrast, if you freeze a totem you had just summoned, it will be frozen the next turn, as it was not eligible to attack when it was frozen due to summoning sickness. Basically, freeze isn't on a turn timer so much as its predicated on attack eligibility, which is only really relevant when considering Cryostasis.
It's my understanding that if you use Cryostasis on a totem(or any minion) that was just summoned, it will remain frozen until the end of your next turn.
If you use it on a friendly minion that was already on the board from a previous turn and hasn't attacked this turn, it will thaw at the end of your turn.

I’ve definitely, in my even shaman, summoned a Totem on 1, played cryostasis on 2, and can have that 3/5 Totem attack on 3.
