It is because you phrased it wrong. You said "The next minion summoned switches side." That would basically be a secret Mind Control, which would be OP for its cost. What you mean would be worded "The next minion summoned by another card switches sides."
However, this would be strange with some other cards. What about deathrattle cards like Infested Tauren for example? If that card died during the opponents turn, would that give you the 2/2 slime? Would this also work with Resurrect? Also, I'm assuming that would mean Leeroy Jenkins would then give one of the 1/1 Whelps back to your opponent?
There may be better ways to word it. In order to get rid of the Leeroy Jenkins thing, maybe "Take control of the next minion your opponent summons through another card." Or you might want to limit it other battlecries or spells ("Take control of the next minion your opponent summons through a battlecry"). That would work for the jade battlecries, nzoth, sindragosa, big-time racketeer, spiteful summoner, barnes, onyx bishop, saronite chain gang, etc.
