Yh, some of the plots out there have made the "optimistic" approximation of considering the ratio of number of DR cards / number of cards left in the deck constant, which leads to results around 5-ish% superior to the real ones for low and average ratios (2/3rds of the deck max). With an important number of DR minions (5/6ths of the deck or more), the difference is noticeable ;)
But yeah, you're right, simulations are handy and sometimes more efficient than theoretical accurate approaches (e.g. Monte Carlo method).

I like it for N'Zoth wild decks
This card will dominate if you have a Z'Noth deck.
The N'zoth isn't really what will make it dominant, it's enough to have enough playable deathrattle minions. We're sort of scraping as it is.

I want to ask whether roll for the bones works with journey below?
I just played and the draw stop when I drew journey below. Does it not work if the card you draw is not a minion?
