So is it worth burning money/time to have a complete Hearthstone card collection? If not, help me identify the ones which are unique or powerful that are worth crafting. Any constructive suggestions are welcome :)

The following are the missing legendaries as of 3rd March, 2017:
Druid: None. My first legendary was Malorne and Druid legendaries have the most amazing and craziest designs imo.
Priest:Raza the Chained, Vol'jin, Confessor Paletress. I hate the design of this class. I hate the steal cards of this class. I hate the emotes of this class. I just hate that I don't know how to play this class. TL;DR - I FUCKIN HATE PRIESTS (both in this game and real life).
I'd say Wickerflame, Rag Light, Raza and Finja would be your next crafts.
If you play wild I'd also go for Voljin and Malganis.
Confessor & Nexus are pretty cool cards too.
Personally, I wouldn't say a full collection is worth the money, because it's ultimately just digital cards. You'll never get anything physical in your hands and your collection isn't really yours in the sense you can't sell it, so it doesn't have any value except sentimental/emotional. It's really up to you how much worth you see in completing the full collecting. FYI: I think it's going to cost you quite a lot of money. Plus, you should know Blizz is releasing 3 expansions this year. So you'll need to most likely continue spending a lot of money to keep your collection complete.
I have pre-ordered the next expansion and I have around 12k dust lying around. As many of you have suggested i'll try Raza before Reno rotates and wait till they show more legendaries from the new expansion.

Huntard: All of them i.e. Dreadscale, Knuckles, Princess Huhuran, Acidmaw, Gahz'rilla, King Krush. My second most hated class.
Mage: Flame Leviathan, Anomalus, Rhonin. My most beloved class has utter garbage legendaries except uncle TONY.
Paladin: Wickerflame Burnbristle, Bolvar Fordragon, Eadric the Pure, Ragnaros, Lightlord. I have the one and only card to put your faith in.

Warlock: Wilfred Fizzlebang, Mal'Ganis. I love Jaraxxus, others are meh.
Warrior: Hobart Grapplehammer, Iron Juggernaut. Most of the time this class legendaries are useless in the meta.
Neutral: Lorewalker Cho, Millhouse Manastorm, Nat Pagle, Nat, the Darkfisher, Auctionmaster Beardo, King Mukla, Genzo, the Shark, Gormok the Impaler, Blingtron 3000, Captain Greenskin, Elite Tauren Chieftain, Finja, the Flying Star, Hemet Nesingwary, Mimiron's Head, Nexus-Champion Saraad, Gazlowe, Gelbin Mekkatorque, Illidan Stormrage, Madam Goya, Maexxna, Mogor the Ogre, Mukla, Tyrant of the Vale, The Skeleton Knight, Toshley, Troggzor the Earthinator, Foe Reaper 4000, Gruul, Sneed's Old Shredder, The Boogeymonster, Mayor Noggenfogger, Mekgineer Thermaplugg, Nozdormu.

Why would you want to craft a bunch of cards you will never, ever use? No one but you will ever know or care that you even own them.
Just craft them as you need them for decks.
You can thank me for this advice by sending me 50 percent of the thousands of dollars you would have spent on this mad endeavor.

I'm only aiming for the classic set. The rest i only want those cards that are really good and will use.
But if you have the money and the dust the go for it.
There are some very nice legendaries there if you like playing gimmick decks (like mimiron's head). Otherwise, why would you need them?
i would wait till we see all the new legendaries in the next set.
we might get some really good ones, that might be must craft.
if i was you i would craft Raza the Chained as i play reno decks. Ragnaros, Lightlord is also a soild craft if you play pally decks.
Ragnaros, Lightlord & Raza the Chained for sure crafts if you play priest or paladin
& I have a feeling now that Alakir the Windlord is classed as an "elemental" this card will get some awesome buffs in the new expansion.
