I'm considering disenchanting my golden Twin Emperor Vek'lor in exchange for a different legendary as I don't find myself playing C'thun decks. Are there any legendaries I should consider?
Note that I already have a Ysera, Tirion Fordring, Grommash Hellscream, and Yogg Saron?
I've considered Confessor Paletress but I often hear that she is more of a risk/reward minion and isn't worth crafting.

Paletress is terrible, you will very seldom get value from her. Go:
1: Ragnaros firelord
2: Sylvanas
3: N'Zoth
4: Cairne
5: Anton/Fandral/Light Rag/Jaraxxus depending on what class u like.
You don't have to be playing a c'thun deck to run twin emps. If you just add a few c'thun buffs the effect will go off anyway.
You could run in a control warrior with ancient shield bearer and some buffs
But if you're set on crafting a legendary I'd go with a classic, like sylvanas as you'll get more value in terms of standard
You do realize that you actually need to have C'Thun in your deck for any kind of buffs to go off right? I hate to break it to you, but C'Thun, Twin Emperor Vek'lor and a couple of c'thun buff cards, is actually a c'thun deck...
Ontopic, if you want to DE vek'lor I would recommend crafting rag or sylvanas as your first choice.

Actually that isn't true, I have a Shaman deck that runs C'thun buffs but not C'thun. Why you ask? Cause you can STILL trigger any C'thun effects even without C'thun there as long as you played enough buff cards to trigger the other cards. I'll drop the C'thun buffs then play Veklor and Evolve to get two 8-drops. Try it for yourself.
Ok, I guess the wording on Vek'lor is incorrect then since it shouldn't trigger if there's no c'thun.
The text on veklor is fine (C'thun buffs in your collection) , its obv that you just dont understand it. Maybe next time dont post advice on something you dont know, no offense.
No it actually isn't fine. If there is no c'thun, the wording clearly indicates that it can't trigger. You using an entirely different wording as an explanation doesn't change the actual text on the card.
I usually don't give advice unless I know what I'm talking about, I was absolutely certain that this was the way it worked. Not only because of the card text, I was sure I've heard that it worked that way as well. But it seems I'm wrong.
The wording says (Wherever it is) so it can be in your collection, or your opponents deck if Entombed, but the buffs will keep working even if it's not in your deck.
If you don't have Rag or Sylv, craft one of them. Both fit nicely in N'zoth control decks, which I think are much more fun than the current Warrior variants. Obviously you would eventually need N'zoth as well; but that card should see extensive play over the next two years. It's great and will get better as new deathrattles are released.

iLuvMapleSyrup is right. Wherever it is means literally wherever, so it doesn't even need to be in your deck.

Cairne is pretty slow, the class legendaries should be at least on the 4th place if not higher.

My philosophy was always to craft the good neutrals first as they are generally useful in more different decks. If you think of impact for specific classes, yes, the class legendaries could be placed higher.
I was very excited to play C'Thun decks when they were announced but after some games, I thought that these decks are quite boring, at least for me. I was so excited, I've even crafted a non-golden Vek'lor to complete decks but that was a waste of dust.
If you think as I am, go for it, disenchant and craft a top-tier legendary. Sylvanas and Ragnaros are amazing cards, must have.

" I also do my own stunts"
If you don't plan on playing any type of cthun decks I will probably craft Sylvanas if i was you probably the best legendary in the game

I own Confessor Paletress and I love it. But sometimes you just get Lorewalker Cho.
It is really high risk and I think it has lost me more games that it has won. I don't care. I play it anyway.
I'm heavily considering N'zoth right now so I might go for that, thanks!

Wouldn't disenchant C'thun is here for another 1.5 years.. there might be new synergies in Druid warrior or priest
no. you won't be able to ever play C'thun if you de it...
I don't know why people are putting antonidas on their 4-5th legendary to craft, I have seen him played at all Ina month.
after Sylvannas, rag, nzoth, cairne, I'd go with bloodmage, Fandral, jaraxxus, nzoth, cairne (in no particular order, it depends what you wanna play)
If you don't play C'thun decks and you need dust , yes DE , but if you play c'thun decks no don't DE
