because its very inconsistent and dependant on draw so games are more diverse. You can comeback at any point with good draw so you always stand a decent chance to win even when losing so again, unpredictable

You just answered your question: because it's an autopilot deck. You see, the majority of players don't want to play the game, they just want to win. And they'll play whatever is the most easiest deck to play and which also wins.
Big priest is the most autopilot deck out there and is an absolute bore to play. That being said, as someone who plays wild for degenerate and interesting combos I absolutely love their existence in general since they're the most combo fodder deck in existence.

I believe the enjoyable part is the part when they win frequently and force half their matches to auto-concede out of the sheer desire to not play a match against a big priest.

Because its RNG that can be controlled. The only matches that Rez Priest hate is when you take all his minions, and destroy them on your side of the board or you transform their minion in tokens and after the first to of res they only get useless tokens so they concede because 90% of the times after that point they will only get more useless tokens. Res Priest is popular because unless your oponent is trying to counter you, the deck cant lose for bad rng. Which is kinda bull***t because other decks have to dealt with bad outcomes more often.
Its the most reliable mana cheating deck in the game, and mana cheating has reliably been the most unfair strategy. The res mechanic in hearthstone is bonkers, and such an easy fix. Instead we get 'nerfs' like barnes, where the ruin a fun card to save a degenerative way of playing. It makes no sense to me. Those who enjoy playing it should be just as happy playing hyper-aggro, it plays almost the same way but upside down, by high rolling off mulligan and simply removing the ability of the opponent to play the game.
The saying "picture is worth a thousand words" perfectly describes this video. In a 15 minutes of entertaining gameplay it says everything there is to be told about the deck and (indirectly) about people playing it. Pure art!
But I'm sure the OP is FINE with things like Bomb Warrior, Whirlkick Rogue, Il'gynoth DH, Tickatus Warlock. All decks which are much more "BS" than Big Priest.
That does not prove anything. He was just extremely lucky. If you are frustrated by an opponent that plays his first minion round 9, what the hell are you doing in the game? seriously. I would win with every single deck on this site against such an opponent. Also he left out of frustration not that he lost, he considered being bmed by the opponent as our guy was roping most turns. He could've aoe his own board any turn. Also he was lucky on choosing the right minion from first res, lucky to get the big res on the turn he most likely would've died.
This deck has many counters. morphing spells pretty much obliterates the deck, you can also use the 3-9 taunt that summons minions for the opponent. Is it an easy deck? Yeah it is, but lets not pretend that the rest 99.99% of the decks are not. Also, every deck gets boring after a while, yet to find an evergreen one.
Any control deck plays the same, you rarely have a choice in what card to play, you play the most mana efficient removal until you drop your big guys, or the overwhelm spells.
It is the most powerful deck(archetype, i change cards frequently ) i played with, i am playing it for 3 years now, went 19 wins in a row with it this season. I find it to be most efficient way to play big minions, i am not going to lie :most games is hanging for my dear life up until shadow essence, but there are plenty of nuances in the spells you choose to play(the spells you choose to put in the deck).
I have mostly all the cards, i play all archetypes(rarely copy-paste the deck as i find it, for me deck building is a part of the game-play), i alternate wild and standard (i really dislike res in standard thou), most played class is paladin(i don t play dude paladin, i think it is boring but i played a lot of secret pally back in the day, so yeah i kinda go for the scummy decks). I like finding perfect counters to the meta but most often than not i find myself joining the very thing i sworn to vanquish, i guess i just like to win.

The Il'gynoth combo is known for being one of the most difficult OTK decks to play and is surprisingly non bs for an otk in general. The other decks also all have pretty set play sequencing although bomb warrior definitely isn't very interactive to play against. Another point is that none of the decks you mentioned have been top tier in wild for 4 years straight.

Big priest is kinda the most fair deck out there when it comes to wild. U can beat it with agroo hell maybe even some cheesy deck. Looses to relative fast combos and let u play the game.

Bomb warrior is the worst archetype, they hit you zero, and your bad rng draw dictates the game. Hell, steal priests may be stealing your cards, but they hit you straight in the mouth, they do know the 'place'.
Tickatus is a dumb card for dumb people who later cry over aggros and combos, because they don't reach turn 8 when they can tickatus-emote you (while squelched, for me), because other than that "combo" the deck reeks of low skill bs. It's just unfun meme bs, but galalock, in general, requires skill.
Whirlkick (unlike face) rogue and ilgynoth otk are rather high skill decks, even mozaki is, and neither are nowhere near big priest mana cheats and braindead-ness, and if any decks - it's libram pally that highroll & cheats mana like crazy, neither of which should be pally 'identity' (p.s. odd pally and maybe handbuff are the only decks that actually fit pally should-be identity), not to mention druids highrolling to 8 mana turn 4 and think they actually skilled you out (prenerf wild embiggen druid requires more skill).
Your choice of decks is questionable, again, other than bomb warrior.
