Between Boomsday and Rastakhan, I stopped playing HS, but I got back into it at the start of this month.
So my question is: What are the best legendaries and epics from the expansions I've missed (RR, RoS, SoU, DoD, GA, AoO) rn and will be good for a while? Before those, my Wild collection is pretty healthy. Well, as healthy as an F2P player's collection can be. I have all the adventures, and a bunch of legendaries from expansions. But I still don't have all the legendaries I'd want to explore.
I managed to come back at the perfect time to both obtain Galakrond himself for free, and get the free deck for returning players (I picked mage for Zephrys the Great and DragonQueen Alextrasza).
My favourite decks are Reno +N'zoth Control decks, with my top 3 classes being Priest, Warlock, Druid. I also like Paladin and Shaman. To that end, I've crafted Activate the Obelisk, Kanrethad Ebonlocke, Archmage Vargoth and Kronx Dragonhoof, and I have 7k dust left. This was, of course, after opening up to 10 packs of the expansions I missed, sadly getting only 1 legendary I might use (Making Mummies)
So, apart from the legendaries stated, and with 7k dust, what are the best cards that will likely be good for a while? And which card sets should I spend my gold on? Should I buy GA? Should I save for the next expansion?
I came back to the game exactly like you, except I stopped playing a bit sooner (just before Witchwood). Also picked the Mage deck for Alex and Zephrys, I don't regret it at all - although I learned pretty quickly that I hate the class now (I actually stopped playing because I was tired of dealing with Yogg BS, so you can imagine how I feel about current Mage decks).
I'm not sure Kanrethad Ebonlocke was a good craft for you, you seem like a control enthusiast but the card is mostly used in zoo-ish decks right now, you should have waited a bit... the rest of your crafts seem pretty solid.
high-lander related should be very great. if you go well with DH or Priest playing mindset, the classes are very strong to craft. warlock is a bit polarized into zoo and highlander only, not very strong. druid I am unsure.
may be you can read class / card stats on hsreplays :P~~~
I don't like Siamat personally. I think it has too little impact. It's either a 7 mana taunt with divine shield with poor stats or you get to rush some things down and it dies. It only works well as a rush minion because rogue can stunner it and DH just ignores it if they don't kill it and they kill you anyway (if you arn't dead already). As a rush minion it seems inferior to Restless Mummy which is only 4 mana.

Sure, it might be worse than Mummy. But you can't play Mummy in Big Druid or Control Warlock.
It's not going to outright win you the game, but it's arguably the most flexible legendary in the game right now. It's currently the 6th most played neutral Legend.

I would suggest Heistbaron Toggwaggle, Flik Skyshiv, and Shadowjeweler Hanar if you like rogue at all.
All of the legendaries in Demon Hunter

Siamat is great for Control/Reno and Maiev Shadowsong is great for tempo decks.
