Interesting the disparency between coin and not coin, I'll throw in some of my own stats below AGAINST the same classes - none of these include the dual arena time and are all post frozen.
Mage : 79 games played. 60.76% WR overall. 57.5% with the coin, 64.1% without. Paladin : 75 games played. 68% WR overall. 57.14% with the coin, 77.5% without. Priest : 48 games played. 75% WR overall. 85% with the coin, 67.85% without.
These were my three most played against classes too. Priest is the ONLY class where my WR is higher with the coin than it is without, which is interesting considering that's where the biggest difference laid for you but in the other direction. Small sample sizes of course but I wonder if it's linked to playstyle somehow.
In terms of winrate against all classes, after 19 games against Shamans I have lost... 1. Worst winrate is actually against Warrior but I've only played against 6 of them so it's such a tiny sample size.

IMO, Priest decks usually lack mana curve, that's why having a coin is an advantage.
