I'm having a blast with Highlander Druid lately (the one that Dekkster has come up with https://www.hearthpwn.com/decks/1378431-highlander-druid). Don't have stats, but I easily made it from P5 to D5 last season and currently I'm almost back in D10 with it. Elize generates ton of value at times, Y'Shaarj package also feels good even though there are only 3 Corrupt cards.
Prime Warlock, definitely. Kibler's been running a few builds and he usually posts the deck lists in his videos, I climbed to mid Plat last month with it
Galakrond Rogue is my jam. You're gonna want to max out "discover" cards before the rotation. Every game is different. You can play tempo, midrange, or control. You routinely get to play with cards that you don't have in your collection.
Tends to get worked by combo decks, but every other matchup is a blast.
Interesting question, though it's obviously debatable what is a "fun" deck.
Most Quests will probably have no chance in Wild except for Shaman and Warlock perhaps. I really liked Unseal the Vault, and it might have some very small chance because of some wacky OTK potential, but its time is probably up. Same goes for Untapped Potential. And I have no hope for Priest, Rogue, Paladin etc.
Galakrond Decks are also less likely to succeed in Wild, but maybe you had enough of them already. Dragons like Dragon Hunter oder Druid are also not gonna be a thing in Wild anymore.
Shuffle Rogue is probably not gonna be winning much in Standard either, but it's hopeless in Wild. If you have Waxadred or Mogu Cultist, it might be your last chance to get something out of them.
I have been playing a jank hunter deck I threw together for a quest. It is basically res priest, but as hunter using Jewel of Nzoth. It's pretty fun, just because no one expects it.

The title says it all, which decks, that does not stand a chance in wild, would you recommend trying before cards used in them rotate out of standard?
Fun decks that have a decent chance of winning too

I guess highlander decks in general are worth playing for a last time in standard.
FUN DECKS DONT EXIST
Quest rogue fun and can still win.

When Conjurer's Calling gets reverted, you could play Khadgar again, while it's still in Standard.
