It's supposed to be a challenge. Learn the mechanics of the later bosses and plan ahead. If you don't like thinking then go back to netdecking constructed.
I find dungeon run to be probably the most fun thing they’ve ever done in Hearthstone. Would love it if Arena worked more like this. I’ve had fun losing, and I’ve had fun winning. If you lose one, just roll up again. You’re going to get a drastically different experience.
If you just rolled through, would it be any fun? Meeting a boss that seems overpowered, then later building a deck you destroy them with is a lot more satisfying.
The first bosses are easy like you said, so your early card picks should be in preparation for the end game; not just whatever makes your deck better right now.

RNG is a factor for sure, but it definitely is a matter of skill as well.
But it is possible, so far I've been able to clear all but Shaman and Mage
