Am I missing something? The benefit from what I see is only +3/3 in stats and 3 gold and not much else. Why would I want that instead of the effect of the destroyed demon that doesn't carry over?

Anyway. The point of him is stuff that cares about number of demons played - wrath weaver, abyssal, insatiable etc., for whom he's just a free demon. If you'd be selling the other demon anyway, there's no downside. Also works well with the 3/1 that buffs based on damage taken, since that's about the only vanilla. But often +3/+3 is just better than a 1/1 token, for example (obviously, jugglers disagree, but that's jugglers rather than the big demon builds he's more meant for). Also, a great pull from the random demon producing avenger (not that that's great anymore, but still).
Does Soul Devourer put the removed minion back into the recruit pool?
I've always assumed so - but not seen any figures. Would be distinctly nontrivial to tell, considering that you don't know exactly what some of the lobby have - you can easily go 10 rounds without hitting one player, for example, and for all bar one player your info is out of date.
The idea is that on a non-deathrattle demon it is a free +3/+3 upgrade (as you get all the gold you spent back) and has the potential of a slow but infinite scaling. Every time you see a 2nd one in the tavern you buy it and devour your current Devourer, each time getting a +3/+3 buff to it for 0 gold

+3+3 for free and you don’t understand that?
Meant to be used with things like eggs. You get extra stats and a strong deathrattle.
With golden you get 6 gold and double the stats which is nuts.

You get 3 gold back, so it's free. So that's a free proc for 1/3 gnome or 6/6 Bigfernal. And most importantly, a free 3/3 for your Demon.
And sometimes you want to keep the stats, but lose the deathrattle (for example when you want to proc trickster with your parrot)
I mean, it's not the most useful minion, but it's a good tempo choice and economically viable.
