It just doesn't make much sense to me. What's the tactic they use? If I try to rush upgrades, I always have to compromise my board and stay with like 5 minions at most, but some people reach rank 5 in like 5-6 battles and still manage to have like 2-3 golden minions and almost a perfect setup.

It can happen from time to time. Not every single fight. Just keep on playing and you will have a lucky run yourself as well where you rush to 5-6 and keep a strong board.
Deathwing has been a clear example of this, where 1 rat pack would mean you're nearly always safe to rank up all the way to 6 with little to no struggle
Just wait until you have 4 triples in the first 7-8 turns and the minions offered each time are total crap like Strong Shell Scavanger when you have no taunts and the Junkbot when you have no Mechs.
I had a Shudderwock game with 4 triples and I was in 7th place with a rather crappy board left wondering "What the hell is going on? I have had 4 triples and my board is total garbage that looks like the 7 mana turn."
With 8 players, occasionally you'll run into the "won the early game lottery" guy or even be that guy. In this meta, it certainly does not mean he'll win the game and he might finish in 5th or 6th place. The Tier 4, 5, 6 minions are typically what wins the game.
Not rushing is the best tactic, but there are some strategies for rushing and near infinite money. Captain hogger can combo off for nearly infinite money.
Shudderwock early hero power with Alley cat or tide hunter nets two tokens you can sell next turn. Khadgar midgame is also good for this. Bartendotron is great for rushing. When you have a good level one, do tier two turn two and then tier three turn three. Buy two minions at tier three on turn four next turn tier 5.
The flip side to this is Galakrond hero powering a turn 5 mama bear or turn 6 malygos. Also let’s not forget Dino Tamer Brann doesn’t have to level past tier 2.
Some heroes can potentially reward greedy strategies where you rush to high tavern tiers. Examples are Reno (rush to t4 and get a minion that is OP when golden like Herald of Flame) or Alex where you rush to t5 and hope to discover 2 very strong dragons...
Tried Tiering up to 3 with Kael'thas Sunstrider myself, after making a fat 4/6 dragon on the 5 mana turn having a 3/3 and 1/1 to back it up.
The results were great. Tier 3 has all the divine shield mechs and dragons, which I bought. Finished #2 in the game and I took only took -4 damage on the 6 mana turn. My divine shield minions easily won the 7 mana and 8 mana turns against the Tier 2 Murlocs and other stuff people had.
I plan to do this regularly with this particular hero.
Tried Tiering to 3 on 6 mana with Skycap'n Kragg figuring I could use hero power on 7 to help fill my board.
Results were promising and within 3 turns I was in first place. I got solid minions -- had 3x Monsterous McCaw, Rivendare -- but couldn't find Mama Bears or Hydras or even Sneed's to further solidify my board state over the course of 3 or 4 turns so I stagnated finished tied for 5th.

It can happen from time to time. Not every single fight. Just keep on playing and you will have a lucky run yourself as well where you rush to 5-6 and keep a strong board.

Insane highroll or OP hero.
They overbuffed Lich King and made him the new Eudora, he is almost impossible to beat in early and mid game and wins a lot of lobbies.

Saw a player level up to Tier 3 on 6 mana playing Kael'thas Sunstrider. I was opponent on 6 mana and dealt him 8 damage.
Thought "Hmmm."
Several turns later, I'm matched up with again and he has 32 health and I have 20.
Guess it worked out for him, I half expected to not see him again or play his ghost later but maybe it is ok to level up on 6 with certain heroes.
