So I saw Hearthstone a while back, but only recently started paying attention. I have played MtG for years, so naturally, card games peak my interest. For people who know anything about MtG, my favorite decks to play were white decks. More specifically, I enjoyed life gain and soldier token decks that allowed me to gain hundreds of life and hundreds of soldiers. From what I've seen of Hearthstone so far, there is a 30 health cap and a cap on the amount of creatures(minions) on the board. Am I correct in this assumption, or am I missing something?

Yes, 30 health and 7 minions cap.
There is some interesting abilities, but the game is not as complex as MtG, but we have to take in consideration that the game is just debuting, so it is at an early stage.
While it seems simple on the surface I haven't watched a streamer yet that didn't have somewhat regular misplays not factoring in all the different viable options and deck builds so there is much to learn and explore even though it seems simple at a glance.

Indeed. People will still have to learn the more powerful cards and combinations, how to read their opponents' deck, how to "bait" the enemies into using specific cards.
There's a lot to do in the early stages of the game. And then, card balancing (don't know if they will do it, but I assume they will). Balancing can change all of that.

I suggest you read through this: http://www.hearthpwn.com/news/105-hearthstone-beta-is-here
It will give you all the basic info you need to succeed when you get beta access.
Also, it would be nice if you looked for topics to post in and not make several new threads at once. :)
EDIT: just realised you probably just double posted since both topics had the same question. Ive deleted the other one that was created :)

It could be a nice time to get involved, tough.
Welcome aboard.
P.S. I am hoping to get a Beta key, yet.
Yea, sorry about the double posts. Didn't mean to do that.
The game just seems really simple at this point, but you do have a point about it just debuting. It may get more complex as they add content.
It does seem fun though. I'm glad it's free to play. I'll definitely give it a shot.
